pork loin roast, trimmed

Directions:
Rub roast with salt and pepper. Brown pork roast under broiler to remove excess fat; drain well. Place apple quarters in bottom of crockpot. Place roast on top of apples. Combine apple juice, brown sugar, and ginger. Spoon over top surface of roast, moistening well. Cover and cook on Low setting for 10 to 12 hours or until done.

Apple Cider Pork Loin
4 lb. pork loin
kosher salt, pepper, garlic powder, dried rosemary
2 Tbsp. olive oil
1 medium onion, thinly sliced
1 Tbsp. butter
2 c. apple cider
2 Tbsp. Dijon mustard
2 Tbsp. brown sugar
2 Tbsp. cornstarch
Unwrap the pork loin and pat dry with paper towels. Season both sides with kosher salt, black pepper, garlic powder and dried rosemary. Preheat a cast iron skillet over medium high heat. Add 2 Tbsp. olive oil. Place the pork loin in the cast iron skillet and sear all 4 sides until golden brown (about 1-2 minutes per side).
Spray slow cooker with nonstick spray. Place seared pork loin inside. Lower heat on cast iron skillet to medium low and add 1 Tbsp. butter and the sliced onions. Saute for about 5 minutes or until slightly golden and starting to soften.
Stir together the apple cider, Dijon mustard, and brown sugar. Pour this sauce and the cooked onions over the pork. Cover and cook on LOW for 8 hours. Flip the pork loin halfway through for even cooking. Remove to a cutting board when finished cooking. Slice or shred with two forks.
Pour all of the leftover juices into a medium saucepan reserving about 1/2 c. in a glass measuring cup. Bring the juices to a boil. Add the cornstarch to the reserved juices and whisk until smooth. Pour the cornstarch mixture into the boiling juices while whisking constantly. Cook until thickened (reduce heat if necessary to avoid splattering).
Serve the Pork Loin with egg noodles, mashed potatoes or rice, pouring the apple cider sauce all over the top. ENJOY!

How to Make Apple Cider Pork Loin Roast - In the Slow Cooker!
This cozy apple cider pork loin roast is an easy slow cooker recipe that is perfect for a fall or winter menu. It can be made ahead because it reheats beautifully, and is even a good freezer-friendly meal!

1/2 cup chicken or beef stock
2 tablespoons cornstarch

Slow Roasted Honey Glazed Pork
Here is what you'll need:
Ingredients:
1 1/2 lbs Baby Potatoes, red and/or yellow
8 Small Carrots, snapped in half
12-15 Pearl Onions, peeled & ends cut off
3 1/2 lb. Beef Chuck Roast
Salt, to taste
Pepper, to taste
1 Tbsp. Corn Starch
2 Tbsp. Water
2 Tbsp. Worcestershire Sauce
2 sprigs Rosemary
2 sprigs Thyme
Optional:
1 Baguette, cut into 5 inch pieces
Instructions:
In a slow cooker, add the potatoes, carrots and onions to make a base for the meat. Lay the chuck roast on top of the veggies and season with salt and pepper on both sides. (Wash your hands!) Mix cornstarch and water until well combined and pour close to the edge so it gets down to the veggies. Pour Worcestershire sauce directly on top of the meat. Cover with the slow cooker lid and cook on high for 5 hours. Place the rosemary and thyme sprigs on top of the meat and cook for 1 more hour. Remove rosemary and thyme. Using a fork, shred the meat and serve by itself with the veggies, or on top of bread for a sandwich! The juices from the bottom of the slow cooker make for an AMAZING dipping sauce! Enjoy!
