Apple Cinnamon Baked French Toast with Salted Maple Whipped Cream

APPLE CINNAMON BAKED FRENCH TOAST with SALTED MAPLE WHIPPED CREAM
Serves 8
For the French Toast:
1 brioche loaf, dried out on the counter or toasted in a 350 degree oven, cut or torn into 1 inch cubes
1 pint heavy cream
zest from 1 orange
1/4 cup pure maple syrup
10 eggs
1/3 cup brown sugar, packed
1 cup pure applesauce
1/2 tablespoon ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon pure vanilla extract
1 teaspoon kosher salt
For the Salted Maple Whipped Cream:
1 pint cold heavy cream
1 teaspoon fine sea salt or fine Himalayan pink salt
3 tablespoons pure maple syrup
1 tsp pure vanilla extract
Preheat your oven to 350 degrees.
Butter a 3 quart casserole dish.
In a large bowl, whisk to combine the eggs, orange zest, maple syrup, heavy cream, brown sugar, apple sauce, cinnamon, nutmeg, vanilla and salt. Add the bread cubes and toss to combine. Add your bread mixture to the casserole dish, patting it down and making sure the bread is covered. Let it sit on the counter for 10 minutes. Dust lightly with powdered sugar.
Bake in the oven for 50-60 minutes, or until set.
While your french toast is in the oven, make your whipped cream. Whisk the heavy cream, maple syrup and salt together with a hand held blender until firm and fluffy. Serve with your warm french toast.

Apple Cinnamon French Toast Bake Recipe
Ingredients:
1 tbsp butter, room temperature
8 slices whole wheat bread
1 medium apple
2 large eggs
1 1/4 cups milk
4 ounces cream cheese, softened
2 tbsp maple syrup
1 tsp brown sugar
1/4 tsp ground cinnamon
1/4 tsp vanilla extract
1 cup strawberries or blueberries
1 tbsp powdered sugar
Directions:
1. Preheat your oven to 350 degrees.
2. Grease a 9x13 baking dish and set aside.
3. Cut up the bread into small squares. Arrange on the bottom of the greased baking dish.
4. Core the apple and cut into small squares. Sprinkle it over the bread.
5. Mix together the egg, milk, cream cheese, maple syrup, butter, brown sugar, cinnamon, and vanilla extract.
6. Pour over the cubed bread and apple in the baking dish.
7. Stir the ingredients to ensure the bread is evenly coated.
8. Bake for 45 minutes.
9. Let cool and then sprinkle with berries and powdered sugar.
10. Cut into 8 squares and serve.

FRENCH TOAST
• 1 large day old bread loaf like brioche, challah, crusty sourdough or French bread, see notes
• 6 whole eggs
• 1 cup whole milk
• 1/2 cup heavy whipping cream
• 2 tablespoons real maple syrup
• 1 tablespoon vanilla extract
• 3/4 teaspoon ground cinnamon
• 1/8 teaspoon ground cardamom
• 1/8 teaspoon fresh grated nutmeg
• 1/4 teaspoon fine sea salt
• 2 tablespoons butter plus more for greasing pan
• Optional toppings: Maple syrup, honey, powdered sugar and fresh berries
CINNAMON SUGAR TOPPING
• 1 tablespoon granulated sugar
• 1/2 teaspoon ground cinnamon

Overnight Cinnamon Apple French Toast Bake
RECIPE:
Overnight Cinnamon Apple French Toast Bake - Prep the night before and serve for breakfast/brunch! So easy, so creamy, and so good for a crowd!
INGREDIENTS:
3 tablespoons unsalted butter
3 large apples, peeled and diced
2 tablespoons brown sugar
1 ½ teaspoons ground cinnamon, divided
1 16-ounce loaf brioche bread, cubed
1 8-ounce package cream cheese, cubed
12 large eggs, beaten
2 cups whole milk
⅓ cup maple syrup
1 teaspoon vanilla extract
½ teaspoon kosher salt
½ cup chopped pecans
1 tablespoon confectioners’ sugar
DIRECTIONS:
1. Melt butter in a large skillet over medium heat. Add apples and cook, stirring often, until just tender, about 5 minutes. Stir in brown sugar and 1 teaspoon cinnamon; continue cooking until sugar has dissolved, about 1-2 minutes. Let cool.
2. Lightly coat a 9×13 baking dish with nonstick spray. Place a layer of bread cubes evenly into the baking dish. Top with cream cheese and half the apple mixture in an even layer. Top with remaining bread cubes and remaining apple mixture.
3. In a large glass measuring cup or another bowl, whisk together eggs, milk, maple syrup, vanilla, salt and remaining 1/2 teaspoon cinnamon. Pour mixture evenly over the bread cubes. Cover and place in the refrigerator for at least 2 hours or overnight.
4. Preheat oven to 350 degrees F. Remove baking dish from the refrigerator; let stand 30 minutes.
5. Sprinkle with pecans; place into oven and bake, covered, for 30 minutes. Uncover; continue to bake for an additional 25-30 minutes, or until golden brown and center is firm.
6. Serve immediately, sprinkled with confectioners’ sugar, if desired.
