Virtual Cooking Class: Lemon Shrimp Angel Hair Pasta
Chef Lynn Wells demonstrates her rendition of a zesty shrimp angel hair pasta made with local shrimp!
Lemon Shrimp with Angel Hair Pasta
• 2 pounds (17 to 21 count) fresh shrimp, peeled and deveined
• Good olive oil
• Kosher salt and freshly ground black pepper
• 1 pound whole wheat or regular angel hair pasta
• 2 tablespoons unsalted butter, melted
• 2 tablespoons honey
• 2 tablespoons almond butter
• Zest and juice of 2 lemons
• Fresh basil leaves
Preheat the oven to 400 degrees F. Place the shrimp on a sheet pan with 1 tablespoon olive oil, 1/2
teaspoon salt and 1/2 teaspoon pepper. Toss well, spread them in one layer and roast for 6 to 8 minutes, just until they're pink and cooked through. Meanwhile, drizzle some olive oil in a large pot of boiling salted water, add the pasta and cook until al dente, about 3 minutes. Drain the pasta, reserving some of the cooking liquid. Quickly toss the pasta with the melted butter, 1/4 cup olive oil, the lemon zest, lemon juice, 1 teaspoons salt, 1⁄2 teaspoon pepper, honey, almond butter, and about 1/2 cup of the reserved cooking liquid. Add the shrimp, garnish with fresh basil leaves, and serve hot.
Garlic, Oil and Chili pepper Spaghetti
Garlic, oil and chili pepper spaghetti
Welcome everybody to CucinacoNoi, today I'll prepare you a typical recipe of the Italian cooking: garlic, oil and chili pepper spaghetti, very suitable for a spaghetti meal with friends. The ingredients we need for 4 people are: 2 cloves of garlic, 2 fresh chili pepper, a bunch of rosemary, 400 grams of spaghetti, 6-7 spoons of extra virgin olive oil and salt. After having put a pot water on the stove, let's prepare the ingredients. So clean the garlic and cut it in slices. / If you want you can also mince it, to make it simpler to eliminate it if not desired. Let's cut also the chili pepper. / And mince the parsley. / At this point you can start cooking the pasta. So add some salt first, then / and pour the spaghetti. / Turn them to prevent them from sticking, add a lid and cook. Then let's go and prepare the sauce. Pour some oil in a pan and add the garlic. / Let it brown at moderate heat. When it has get quite brown, add the chili pepper. Let the flame very low to prevent the ingredients from burning and to let them release their aroma. At this point, add half of the parsley, let it there for a few seconds adding a little ladle of cooking water. // Our pasta is ready, so let's drain and move it to the pan. / pan fry rapidly/ add another ladle of cooking water and let it go at high heat to make it tie well. Once plated the spaghetti, serve them immediately, because they overcook easily. Bye from Sonia, enjoy your spaghetti meal.
