How To make Ancho Chili Scented Crown Roast Of Pork
***FOR THE PORK*** 1 6 pound center-cut loin of pork tied
(6 to 7)
into a crown roast :
bones facing outward 1 ounce dried ancho chili peppers :
soaked in
1/2 cup hot water until softened seeds
carefully removed :
pureed until smooth 1/2 cup tomato puree or ketchup
1/2 cup honey
1/2 cup red wine vinegar
2 tablespoons worcestershire sauce
1 tablespoon coarsely ground black pepper
1 tablespoon ground cumin seed
2 garlic cloves finely chopped,
:
about 1 tab 1/4 cup good kentucky bourbon
salt and pepper 1 carrot roughly chopped
1 onion :
roughly chopped
1 celery stalk -- roughly chopped
1/2 cup dry white wine
3 tablespoons flour
3 tablespoons rendered pork fat
2 cups hot chicken broth
Have your butcher tie the pork roast into the traditional crown roast shape, ch ine bone removed, split between the ribs to facilitate the formation of the cro wn shape. Ask for the chine bone which will be used to roast the meat on to avo id burning the bottom. In a saucepan over medium heat combine the pureed Ancho chili, tomato puree, honey, vinegar, Worcestershire, black pepper, ground cumin and garlic. Bring the ingredients to a simmer and allow to cook for 20 minutes before removing from the heat and adding the bourbon.
Season the roast with salt and pepper and brush with Ancho marinade. Place the chine bone in a roasting pan and place the pork roast on the bones: this will p revent the bottom of the roast from burning. Place the roasting pan into the ov en and cook for 20 minutes before turning the heat down to 350 degrees F. Brush the roast at frequent intervals during the cooking process to keep the roast moist as well as perfumed with the spice mixture. Add the roughly cut vegetable s and continue to cook until the roast reaches an internal temperature of 150 d egrees F. Remove the roast from the pan and allow to stand for 20 minutes befor e carving.
While the roast is resting make the quick pan gravy by pouring off all of the r endered pork fat, leaving the rough cut vegetables in the pan. Place the roasti ng pan on the stove top, turn the burner on underneath the roasting pan and con tinue to cook the vegetables with the chine bone. Carefully deglaze the pan by adding the wine allowing most o f the liquid to cook off before adding the hot chicken broth, reducing the heat to a simmer. Meanwhile in a small saucepan com bine the 3 tablespoons of pork fat with the flour and cook gently to make a lig ht brown r roux, cooking about 3 to 4 minutes. Using a wire whisk, add the roux to the simmering stock and whip the ingredients together to avoid lumping. Add any remaining marinade to the gravy, then cook for 5 minutes before straining through a fine mesh strainer.
Serve the roast, by carving at the table, with the dressing and gravy on the si de.

Skyrim is a few years old now but remains hugely popular, and it boasts a thriving community of players and modders who are keeping the thing going and going and going. I haven't played it myself in a bit, but I have thoroughly enjoyed the time I spent in Skyrim, and I've been thinking about making drinks from it for a long time. It doesn't hurt that Drinks from Skyrim is one of the most common requests I get, so let's do it. Looking at Skyrim there's a few options I can go with, Skooma comes to mind of course, but since Skyrim actually has three legitimate cocktails in its setting, it seems silly to start with anything else, so I'll have to save the Skooma for another day. I'm instead going to focus on the drinks served by Talen-Jei, the bartender and owner of the Riften bar called The Bee and The Barb. He's got three speciality cocktails on the menu, and they all sound pretty great, so I'm recreating those here.
White Gold Tower
• .75 oz. -or- 22 ml. Lavender Syrup
• 1 oz. -or- 30 ml. Heavy Cream
• 1 oz. -or- 30 ml. Cognac
• 2 oz. -or- 60 ml. Mead
• Shake & Strain
Velvet LeChance
• 5 blackberries
• 1 oz. -or- 30 ml. honey syrup
• 1 oz. -or- 30 ml. Amaro Di Angostura
• 1 oz. -or- 30 ml. Antica Formula Vermouth (typo in video makes this 2 oz. don't do that)
• muddle
• 1 egg white
• Dry Shake, Shake & Strain
Cliff Racer
• .5 oz. -or- 15 ml. cinnamon syrup
• .25 oz. -or- 8 ml. bénédictine
• .5 oz. -or- 15 ml. ancho reyes chile liqueur
• 1.5 oz. -or- 45 ml. cognac
• stir & strain
• garnish with lemon twist

Make the filling a day ahead to the process to go faster ????
Remember this recipe is for a small batch, to get the tamales cook in 1/2 the time you can always cook on stovetop. Me personally wouldn’t use the instant pot to cook a whole batch of tamales this is for the days that my kids crave tamales
This batch makes up to 24 tamales you can get more if you make them smaller and spread less masa we LOVE the masa so the thicker the better ????
✅soak the corn husk the night before or while the meat cooks soak in boiling hot water
✅skim some of the fat from the broth using for the masa, remember we already using lard
Ingredients: 2 dozens
26 corn husks
1 lb Chuck roast(I use it to get fat on my broth)
2 lbs Chuck tender roast
Salt I used 3 tbsp
1/2 onion
5 garlic cloves
3 bay leaves
Water up to max line
For the sauce:
10 New Mexico Chile pods
2 Chile ancho
7 small tomatillos
Chile de arbol(optional)
4 garlic cloves
1 tsp ground cumin
1 tsp oregano
Salt to taste I added 2 1/2 tsp
For the masa
4 cups instant corn masa for tamales
8 oz lard
2 tsp baking powder
Salt to taste I added 1 tsp
4 cups broth
1 cup water
1 serving of love????
