### Almond flour vs almond meal
You can use both because almond flour or also known as almond meal are both made out of grounded almonds. Most companies use the terms interchangeably but [in the US for example, there is a slight difference between almond meal and almond flour]( Almond flour is sold with the finest grind of blanched almond while almond meal is slightly coarser as the skin is also blended together. For this recipe, you would want to get almond meal for the best flavours. Traditionally, you can feel the crumbs of almond in the cookies as you chew on them. Moreover, the blended skin makes the cookies very attractive too.
### Homemade almond flour
Almond flour can be made at home. Just blend the almonds finely but do be careful not to blend them for too long or it would end up as almond butter.
### Can I use corn/tapioca flour instead of wheat flour?
You may but it is going to change the texture of the cookies. This recipe delivers the light crunchiness on the outside while crumbly and soft on the inside. Using corn or tapioca flour will not deliver this effect. Wheat flour is required to create structure in the cookies as almond flour (or almond meal as known in the US) does not bind well.
### Must I use baking powder and/or baking soda?
Yes! Baking soda is needed to raise the dough to give it the soft and crumbly texture. However, baking soda reacts immediately and fizzles off pretty quickly. Since the baking process happens slowly, you'd want to extend the effect of baking soda. To counter the quick reaction of baking soda and extend it, baking powder is required as one of the acids in it reacts to heat. This makes the dough rise as it is baking.
### Which type of oil?
Peanut oil would be the best choice to accompany the nutty flavour of almonds. However, any neutral-flavored oils such as canola, sunflower or corn oil would be great too.
### How to store the cookies?
Almond cookies must be cooled to room temperature before stacking them up in an airtight container. They can be kept for 4-6 weeks in a cool area, away from the sunlight. Enjoy the cookies with a good cup of quality Chinese tea.

Homemade Vanilla Almond Cookies Recipe - Perfect for Any Occasion!

Ingredients:
1 cup unsalted butter room temperature (8 ounces) (226 gr)
1/2 cup granulated sugar (100 gr)
2 tsp pure vanilla
3 egg yolks
1 cup almond flour/meal (125 gr)
2 cups all purpose flour (280 gr)
1/2 tsp baking powder
1/4 tsp salt
1 cup confectioners sugar (10X sugar)
Directions:
Step#1- Using a stand up mixer or handheld mixer cream the butter with the sugar until light and fluffy. Usually about 4 minutes. Add vanilla and egg yolks one at a time. Let it get absorbed before adding next one. Lower speed and add almond flour. Continue mixing.
Step#2- Combine flour, baking powder and salt.
Step#3- Sift into mixture and mix until dough forms. If you’re using handheld mixer you can do this last part by using a spatula. Once dough is formed cover with plastic wrap and chill in refrigerator for at least one hour.
(This dough can be made ahead and also frozen).
Step#4- Use a one tablespoon size ice cream scooper to scoop each cookie. Roll between your hand as if you were rolling to make meatball round and round. Then move your hands front to back creating a roll. Fold the tips forward making a crescent.
Step#5- On a parchment paper lined cookie sheet space each cookies about 1 1/2 inches apart. Bake at 350 degrees Fahrenheit (180 degrees Celsius) for 10 minutes or until tips are golden.
(Don’t overcook).
Step#6- Let them cook about 10 minutes before coating in confectioners sugar.
Step#7- Coat each cookie and finish cooling on rack.
(Dust more confectioners sugar before serving).

I’m sharing how to make simple tuiles and enjoy them in many ways; basic cigarette cookies, lace cigarette cookies, almond cookies, and cookie sand. You’ll learn important tips to spread it, roll it much easier, store them, etc.
???? The ingredients:
One batch of the recipe makes 5-6 cigarette cookies from 5” | 12.7 cm✖️10” | 25.4 cm rectangle sheet. (You can make it shorter; 5”✖️ 5” or try any shapes and sizes you like!)
* Chill the batter in the fridge to spread it evenly easier. Do not chill it for lace cigarette cookies since it gets a bit too hard to pipe.
• Egg 1.75 oz | 50 g (about 1 medium-large egg)
• Vanilla extract 1/8 tsp or more
• Powdered sugar 1.75 oz | 50 g
• Salt A few pinches
• Unsalted butter (melted) 1.75 oz | 50 g
• Almond flour 0.17 oz | 5 g
• All-purpose flour 1.6 oz | 45 g
* Almond flour helps to roll cookies a little bit easier and it also adds a nice flavor. But if you want to avoid using it, alternate it with all-purpose flour: 1.75 oz | 50 g of all-purpose flour in total.

• Toasted sliced almond
• Chocolate
• Cacao nibs
