How To make All American Cherry Pie
4 cups Fresh tart cherries
1 1/3 cups Sugar
2 tablespoons Plus 2 teaspoons
- quick-cooking tapioca 2 tablespoons Kirsch -- optional
Pastry for 9" double-crust - pie shell -- unbaked 2 tablespoons Butter
450 degrees. Sort, rinse, stem and pit cherries. Mix cherries, sugar, tapioca and kirsch in large bowl; let stand for 1 minutes.2. Pour fruit into unbaked pie shell and dot with butter. Cover with top crust (slashed to allow steam to escape) or lattice pastry. Bake 10 minutes at 450 degrees. Then reduce oven temperature to 350 degrees and continue baking until golden brown, about 40 more minutes. Ingredients
2 packages refrigerated pie dough
1 cup cherry pie filling
1 egg beaten, optional
Instructions
Preheat oven to 400°F. Line a 8-9 inch round cake pan with parchment paper.
On a work surface, roll out the pie dough.
Using a 2-inch round cookie cutter (or similarly sized water glass), cut as many circles as possible from the dough. Repeat for second pie dough.
Pick up one circle and pinch the ends together to make a boat shape. Spoon in one cherry from the pie filling, and place into the cake pan facing up.
Repeat for the remaining circles until the pan is full.
Brush with optional beaten egg, and then bake for 12-15 minutes until the edges turn golden.
Serve in the pan, or use a spatula to get beneath the parchment and lift the pie up onto a serving plate

All American Cherry Pie Pops:
8 ounces frozen, dark, sweet cherries, defrosted
1/2 cup sugar
1/8 cup toasted sliced almonds
Zest of 1 lemon
1 tablespoon lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon ground ginger
1/4 teaspoon almond extract
1 tablespoon tapioca starch
2 boxes (4 pie crusts) pre-made pie dough
Red, white and blue sanding sugar
6-inch candy sticks
1 egg, whisked
1.Preheat oven to 375 degrees and line a sheet tray with parchment paper.
2.In the bowl of a food processor combine sugar and almonds and process until the almonds become as fine as the sugar. Add the cherries, lemon zest and juice, salt, ginger and almond extract and pulse a couple times just to combine, the cherries should not be too fine.
3.Pour the cherry mixture into a sauté pan and add the tapioca starch. Stir to combine and bring to a boil. Allow to boil 1 minute until thickened and then remove from heat and allow to cool completely.
4.Cut 2-inch rounds out of the pie dough. Add a heaping teaspoon of the filling to one round. Place the candy stick in the pie, lightly pushing it into the dough. Top with another piece of dough and crimp the edges together with a fork. Brush the top with egg wash and sprinkle with mixed sanding sugar.
5.Place on prepared sheet tray and bake for 15 minutes. Allow to cool and serve.
Yields: 14-16 pie pops
*** To make pie pops that look like the House of Cards Logo simply:
1.Cut pie dough into 2 1/2 inch x 1 1/2 inch rectangles.
2.Place a heaping teaspoon of pie filling into the center of the rectangles. Add a pie stick to the center of the filling and push gently into the dough.
3.Top with another piece of dough and press edges together to seal completely.
4.Start with blue sanding sugar and sprinkle a square of blue in the bottom right hand corner of the rectangle.
5.Next use red sanding sugar and sprinkle 3 stripes on the flag, leaving space in-between each stripe. Fill the remaining spaces with white sanding sugar.
6.Place on parchment lined sheet tray and bake for 15 minutes in a 375 degree oven.
