How To make Adai
Ingredients

cup
rice
1/3
cup
urad dal, green lentils
1/3
cup
chana dal, red lentils
1/3
cup
yellow split peas
1
teaspoon
salt
1
teaspoon
red chili powder
1
each
onion, optional
1
each
carrot, optional
1/4
cup
coconut, grated, optional
Directions:
Mix rice, chana dal, urad dal, and yellow split peas in a large vessel. Soak in a lot of water for about 2 hours. Grind the soaked mixture with chili powder and salt coarsely, without adding much water.
Ferment for about 3 - 4 hours, then refrigerate or freeze. In cold weather, the fermenting process might take longer, and it might be a good idea to ferment in an oven (the pilot light will keep the mixture warm).
Add either onions (finely cut), carrot (grated) or coconut before preparing.
Freezing Notes: If freezing, only ferment for about an hour. The mixture will have to be left out for a while before being ready to use.

ADAI DOSA
Ingredients
½ cup rice, soaked and drained
¼ cup split Bengal gram (chana dal), soaked and drained
¼ cup split pigeon peas (toor dal), soaked and drained
¼ cup split black gram (urad dal), soaked and drained
¼ cup split green gram (moong dal), soaked and drained
1 large onion, sliced
1-2 dried red chillies
¼ teaspoon turmeric powder
Salt to taste
½ tablespoon cumin seeds (jeera)
1 tablespoon finely chopped ginger
1-2 green chillies, finely chopped
Oil for cooking
Green chutney for serving
Tomato ketchup for serving
Method
1. Blend together Bengal gram, pigeon peas, black gram, green gram, rice, onions, red chillies, turmeric powder, salt and cumin seeds with water as required. Add ginger and blend to a smooth batter. Transfer to a bowl.
2. Add green chillies and adjust the seasoning.
3. Heat a non-stick tawa.
4. Clean the surface with a moist muslin cloth. Pour a ladleful of the batter on it, spread evenly and cook till golden brown and crisp.
5. Add some oil around the edges of the dosa, flip and cook for 1-2 minutes. Remove from heat and set aside.
6. Serve immediately with green chutney and tomato ketchup.

INGREDIENTS :
For soaking one day before
Toor dal 1 glass
Bengal gram -3/4 glass
Moong daal -3/4 glass
Urad daal -1/2 glass
Dosa rice - 2 glass
Kusalakki -1/2 glass
Dabbi byadgi chillies - 7-8
Pepper 1 spoon
Jeera - 2spoon
Fenugreek -1/2 spoon
Salt as required
Ingredients to add for dosa batter
Finely chopped onoIon -3
Green chillies as required
Dil leaves and coriander chopped -1 cup
Ginger crushed -1 spoon
Hing
Chiroti Rava - 2 hand full
Step1: wash and soak all the ingredients for 5 hours
Step2: grind and add salt and mix it throughly
Step3: leave it for fermentation whole night
Step 4: add the ingredients mentioned above to the batter

What's Adai?
Adai is one of the healthiest dishes from the South Indian (Tamilnadu) cuisine. Adai Dosa is the perfect choice for a wholesome and filling breakfast meal. It can be eaten just plain or can be paired with a bowl of sambar and chutney as well. Basically, these are delicious and protein-packed rice and lentil crepes, which are especially popular in the cuisine of Tamil Nadu in South India.
** OUR CRISPY ADAI RECIPE **
Recipe Credits: Special Thanks to my family friend 'Priya Sridhar' from Tamilnadu who taught me this superb recipe.????
Main Ingredients:
- Idli Rice = 2 cups
- Toor Dal = 1/2 cup
- Bengal Gram = 1/2 cup
- Red Chillies = 4
Adai Batter Preparation:
- Soak Idli Rice separately for 4 to 6 hours
- Soak the Dals combinedly for 1 hour
- Grind Rice, Red Chillies and Salt (as per taste) into a coarse paste
- Then grind the Dal in pulse mode twice or thrice with Garlic (as per taste) and Aniseed (Fennel Seeds)
- Mix the Dal with Rice batter and add handful of Onion, Grated Coconut, Curry Leaves and Coriander Leaves
- Add a pinch of Hing powder also.
- Note: Make a thick batter.
Procedure:
- Make Adai on a hot tawa greased with oil / ghee.
- Take a handful of batter and make a thin dosa by patting with your hand if the batter is thick or use a ladle to spread if the batter is thin.
- Sprinkle some oil / ghee around Adai and also on top. Make sure to use enough oil / ghee to cook it fully.
- Cook it on low-medium flame only (do NOT use high flame) till its well cooked & roasted on both sides.
