4 ts Baking powder 3 c Cake flour; sifted 1/2 ts Salt 1 c Unsalted butter; room temper 2 c Sugar 4 Eggs; separated 1 ts Vanilla 1 c Milk Recipe by: Los Angeles Times - Prodigy In medium work bowl combine baking powder, flour and salt. Mix together. Beat butter until light and fluffy. Add sugar and beat again until very fluffy and light-yellow. Add egg yolks and beat in briefly. Add 1 teaspoon vanilla and mix well. Add half of flour and lightly stir in. Add half of milk and lightly stir in. Sift over rest of flour mixture and stir, then add rest of milk and stir. Beat egg whites until soft peaks form. Add 1/3 whites to batter and gently stir in. Pour remainder of whites over batter and fold in gently. Divide batter between 2 buttered and floured 8- or 9-inch cake pans. Bake at 350 degrees about 25 minutes or until wood pick inserted in center comes out clean. Remove from oven and cool on rack. Ice cake as desired. Makes about 9 servings. It gets its name from the ingedients: 1 cup of butter, 2 cups of sugar, 3 cups for flour and 4 eggs.
Ingredients 2 sticks butter, at room temperature 2 cups granulated sugar 3 cups self-rising flour, sifted 4 eggs 1 cup milk 1 teaspoon vanilla extract
Preparation
Step 1 Preheat oven to 350°.
Step 2 Grease and flour 3 (9-inch) cake pans. Using an electric mixer, cream butter until fluffy. Add sugar and continue to cream well for 6 to 8 minutes. Add eggs,1 at a time, beating well after each addition.
Step 3 Add flour and milk alternately to creamed mixture, beginning and ending with flour. Add vanilla and continue to beat until just mixed. Divide batter equally among prepared pans. Level batter in each pan by holding pan 3 or 4 inches above counter, then dropping it flat onto counter. Do this several times to release air bubbles and assure you of a more level cake.
Step 4 Bake for 25 to 30 minutes or until done. Cool in pans 5 to 10 minutes. Invert cakes onto cooling racks. Cool completely and spread cake layers with your favorite frosting to make a 3-layer cake.
