Honey Garlic Meatballs RECIPE
2 eggs
¾ cup soymilk
2 pounds ground beef
1 cup breadcrumbs
1 tablespoon onion powder
1 tablespoon canola oil
4 cloves garlic, minced
1 ½ cups ketchup
1 cup honey
½ cup soy sauce
Cooked rice, for serving
Preheat oven to 400°F.
Whisk together eggs and soymilk in a large bowl. Add beef, breadcrumbs, and onion powder; mix until completely combined. Shape mixture into 1-inch balls; arrange evenly in two 9 x 13-inch pans. Bake 15 minutes. Drain off excess fat; set aside.
Heat oil in a large saucepan over medium. Add garlic and cook until softened, 2 minutes, stirring. Add ketchup, honey, and soy sauce; stir to mix. Bring mixture to a boil over high heat; reduce to a simmer and cook 5 minutes. Add reserved meatballs; cook an additional 5 minutes.
Serve over rice.
Elizabeth says: Honey Garlic Meatballs are sweet and savory. The meatballs get coasted with a thick glaze made from honey, garlic, ketchup and soy sauce. Serve it over white or brown rice for a delicious mid week meal or a people pleasing appetizer for company.
