How To make Honey Shortbread
1 c Butter
1/3 c Honey
1 ts Vanilla
2 1/2 c Flour
3/4 c Pecans; chopped
Preheat oven to 300 degrees. In large bowl, with electric mixer at medium speed, beat butter, honey and vanilla until light and fluffy. Add flour, 1 cup at a time, beating well after each addition (if dough becomes to stiff, knead in remaining flour by hand). Add nuts and blend well. Pat dough into shortbread mold or ungreased 9-inch cast-iron skillet. Score surface of dough with knife, dividing into 24 wedges. With fork, prick deeply into score marks. Bake 35 to 40 minutes until very lightly browned. Cool in pan on wire rack 10 minutes. Remove shortbread from pan; cut into wedges while warm. Cool completely. -----

???? Honey Cookies Ingredients: about 25-30 cookies
1 egg
1/4 cup (40g) sugar
1/3 cup (50g) honey
3 Tbsp (40 ml) vegetable oil
1 3/4 cups (220g) all purpose flour
1 tsp baking powder
1/2 tsp cinnamon (Correction: mentioned 1/3 tsp but should be 1/2 tsp)
1/2 tsp ginger powder (Correction: mentioned 1/3 tsp but should be 1/2 tsp)
powdered sugar (optional)
small bubble wrap
pastry or pizza cutter
???? Honey Cookies Instructions:
1. Preheat the oven to 356F (180C).
2. In a mixing bowl, add egg, sugar, cinnamon, ginger powder and mix. Add in honey, vegetable oil and mix.
3. Sift half of flour and baking powder. Mix using spatula. Sift remaining flour and mix. Using hands, knead until a dough forms.
4. Sprinkle some flour on the work surface, roll out the dough to about 1/3 inch thick. For the honeycomb shape, we will use small bubble wrap. Turn the bubble side down, press firmly with rolling pin.
5. Using a pastry or pizza cutter, cut into 2x2 inch squares.
6. Place the cookies on a baking sheet with parchment paper.
7. Bake for 12-14 minutes or until golden.
8. Let it cool down. Sprinkle some powdered sugar (optional).

???? Shortbread Cookies Ingredients:
1 cup (16 tbsp, 230g) butter
1/2 cup (50g) powdered sugar
2 cups (250g) all purpose flour
2.5 inch cookie cutter
???? Shortbread Cookies Instructions:
1. Preheat the oven to 350F (177C).
2. Using a hand held or stand mixer, beat butter and powdered sugar until light and creamy. Add in flour and mix until mixture resemble crumb texture.
3. Knead the dough with hands until dough forms. Cover the dough with plastic wrap and keep it in the fridge for 30 minutes.
4. Lightly dust the work surface with flour, roll out the dough to a 1/4 inch thick rectangular shape. Using a cookie cutter (I used 2.5 inch round cookie cutter), cut into any shapes you like.
5. Place the cookies on a baking sheet lined with a silicone mat or parchment paper
6. Bake for about 16-18 minutes, or until cookies are pale golden brown.
7. Transfer to a wire rack to cool.

1 1/4 cups (300g) unsalted butter, softened (**mentioned 2 1/2 cups in the video but should be
1 1/4 cups)
3/4 cup (100g) powdered sugar
1 tsp vanilla extract
2 1/2cups (400g) all purpose flour (**mentioned 3 1/4 cups in the video but should be 2 1/2 cups)
3/4 cup (100g) corn starch
???? Shortbread Butter Cookies Instructions:
1. In a mixing bowl, add butter and sugar. Mix until pale yellow. Add vanilla extract and mix.
2. Sift in flour and corn starch. Mix everything together by hand until form a soft dough, knead for 2-3 minutes. Cover with plastic wrap and keep in the refrigerator for 30 minutes.
3. Preheat the oven to 320F (160C).
4. Remove dough from the fridge and press evenly in a baking pan (I used 8x8 pan) lined with parchment paper.
5. Measure 2.67 x 0.63 and score the dough with a cutter.
6. Poke holes into each cookies with a fork.
7. Bake in the oven for 40 minutes.
8. Remove and cool on a cooling rack.
9. Try the shortbread butter cookies with coffee or tea.
