How To make Fall Harvest Spice Cake
1 pk Spice or carrot cake mix
1 c Water
3 Eggs
1/3 c Vegetable oil
1/3 c Apple butter
Maple buttercream frosting: 4 tb Margarine; softened
1/4 c Maple syrup
3 c Powdered sugar
2 c Walnuts; coarsley chopped
1/4 c Chocolate chips
1/4 c Almonds
2 tb Dried apricots; chopped
2 tb Dried cranberries; chopped
2 tb Raisins
1. Preheat oven to 375*. Grease and flour two 9 inch
round baking pans. 2. Combine cake mix, water, eggs, oil and apple butter in
medium bowl. Beat on low speed of electric mixer until blended; beat at medium speed 2 minutes. Pour batter into prepared pans. 3. Bake 35 to 40 minutes until wooden toothpick inserted
into center comes out clean. Let cool in pans on wire rack for 10 minutes. Remove to rack;s cool completely. 4. Prepare Maple Butter cream frosting by beating
margarine and syrup in a small bowl until blended. Gradually beat in powdered sugar until smooth. 5. Place 1 cake layer on serving plate; frost top with
Maple buttercream. Top with second layer; frost topa nd side of cake with frosting. Press walnuts into side of cake. 6. Pipe chocolate onto cake to form a tree trunk. Combine
almonds, apricots, cranberries and raisins. Sprinkle on top of cake to form leaves. **If dried cranberries are unavailable use additional chopped dried apricots and raisins. -----

Full Recipe:
A richly spiced apple cake filled with a perfect brown butter vanilla buttercream and topped with an intoxicating homemade caramel. This cake has all the fall flavors you love and is quite the crowd pleaser!
A FEW NOTES
You can save some time and skip browning the butter. You’ll still love the cake BUT definitely try that brown butter sometime!
If you’re not using 6-inch pans, double the recipe for 8-inch pans or triple the recipe for 9-inch pans.
You can substitute sour cream for the yogurt if desired, I do it all the time and can’t really tell the difference.
To get FLAT layers that are moist inside and out try using cake strips! You can buy a set or make your own from foil and paper towels at home. I made a whole blog post on it so check it out if you’re interested!

Ingredients:
1 1/2 cups flour
1 tsp baking powder
1/2 tsp salt
1 tbsp cinnamon
1 tsp ground ginger
1/2 tsp ground nutmeg
1 cup sugar
1/4 cup packed brown sugar
3/4 cup butter, melted and cooled
2 eggs, room temp
1 tsp vanilla extract
1/2 cup milk
Directions:
To a bowl, melt the butter. Let it cool for just a minute, then add in both sugars. Mix mix mix!
Add in 1 egg at a time, mixing well between each addition. Add in the vanilla. Mix.
Next, add in the salt, cinnamon, ginger, nutmeg and half of the flour. Mix until combined. Add in the milk. Once the milk has been mixed in, add in the remaining flour.
Spray your mini harvest loaf pan with baking spray containing flour or brush the inside with melted butter and dust with flour.
Add in the batter to each well about 3/4 of the way full. Into the oven at 350 degrees for 20-30 minutes, I left mine in the full 30 minutes.
Let your cakes rest in the pan for ten minutes before turning out onto a plate.

Happy Fall it is! This luscious decadent spice cake is the go to for this month of October. If you can't seem to think of a moist and delicious cake with the essence of Fall, this is the one. I guarantee you'll like it. Harvest is a time of reaping what we have sown through out the year, hopefully you've planted good seed! Here are the ingredients: 3c-flour;1/2t.-BP;1/2t.-salt; 1/1/2t. ea. of cinnamon, nutmeg, & ginger.; 5-lg.-eggs; 2 1/2c.sugar; 3-stk.unsalted butter; 1c.-Speculoos Cookie coffee creamer; cream cheese -4oz. Extracts-vanilla, butter-2t.ea. Colors- red & yellow-3 drops ea. or orange coloring. Icing-1 1/2c Powder sugar; 1/8t.ea. nutmeg, ginger,& cinnamon; 1/4c. sour cream; 2T. butter, & 2T. of creamer.
