How To make Fall Pear Pie
8 cups thinly sliced peeled pears
3/4 cup sugar
1/4 cup quick-cooking tapioca
1/4 teaspoon ground nutmeg
Pastry for double-crust pie (9 inch) 1 egg
lightly beaten
1/4 cup heavy cream :
optional
In a large bowl, combine pears, sugar, tapioca and nutmeg. Line a pie plate with bottom crust; add pear mixture. Roll out remaining pastry to fit top of pie; cut large slits in top. Place over filling; seal and flute edges. Brush with egg. Bake at 375 for 55-60 minutes or until the pears are tender. Remove to a wire rack. Pour cream through slits if desired.

This classic Pear Frangipane Tart, called Tarte Bourdaloue in French, makes a delicious Autumn and Winter dessert that is full of flavours and texture. The Sweet Shortcrust Pastry is filled with an Almond Cream and topped with Poached Pears.

Ingredients:
Pâte Sucrée (Sweet Shortcrust Pastry)
- 100 gr Unsalted Butter
- 50 gr Icing Sugar
- 1 Egg
- 50 gr Almond Meal
- 200 gr Plain / All-Purpose Flour
- 1 pinch Fine Table Salt
Poached Pears
- 3 Pears - firm
- 1,5 litre Water
- 50 gr Caster Sugar
- 20 ml Lemon Juice
- 1 1/2 teaspoon Vanilla Paste
Almond Cream Filling
- 100 gr Unsalted Butter - soft
- 100 gr Caster Sugar
- 2 Eggs - about 100gr, at room temperature
- 100 gr Almond Meal
- Flaked Almond (optional) - to taste
Simple Syrup Glaze (optional)
- 45 ml Water
- 45 gr Caster Sugar
- 1 teaspoon Vanilla Paste - optional

Today I am going to show you how to make my Gluten Free Pear Pie!
This recipe is perfect for fall or Thanksgiving, when pears are in season!!
The crust is super fast and easy to make, no rolling pin needed!
I use Bartlett pears for this recipe, but any pear will do!
Frozen pears can also be used, just make sure they are thawed and well drained.
I used Date sugar today, but any sugar will work. Date sugar is so great with fruit!!
You can also use your favorite nut in the crust. You can even add nuts to the topping!
Serve with whipped cream or ice cream!

For the GF crust: (Easy tart crust recipe in my cookbook)
1/2 cup Butter {113 grams}
1 1/4 cups GF Flour
1 Tbsp Date Sugar
1 Egg
1/4 tsp Salt
1/2 cup Walnuts
For the Pear filling:
5 1/2- 6 cups ripe Bartlett Pears, chopped {about 6-7 pears}
1/4 cup Honey {1/2 cup Sugar}
2 Tbsp Cornstarch
1 Tbsp Lemon juice
1/4 tsp Cinnamon
1/4 tsp Salt
1/4 tsp Nutmeg
For the Streusel topping:
1 cup GF Flour
1/4 tsp Salt
2/3 cup Date Sugar {2/3 cup White or Brown Sugar}
6 Tbsp Butter {85 grams}
1 Tbsp Heavy Cream
Oven 375 F. Bake the pie for 35 minutes. Add the streusel topping, and bake another 30 minutes. If the top gets too brown, cove with foil.

Ingredients for making harvest pear crisp:
6 cups bosc pears, cored and sliced
1 tablespoon fresh lemon juice
1/3 cup sugar
1 tablespoon cornstarch
1 1/2 teaspoons ground cinnamon
2/3 cup all-purpose flour
1/2 cup brown sugar
1/2 teaspoon salt
3 tablespoons cold butter
1 cup regular oats
1/2 cup sliced almonds (optional)
Instructions for making classic pear crisp:
- First in a large bowl add your pears
- Then add your fresh lemon juice
- Mix the two together
- Now in a separate bowl add your sugar to the bowl
- Followed by your cornstarch
- Then add your ground cinnamon
- Mix everything together
- Combine the contents of both bowls and mix
- In your baking dish pour in the pear mixture
- Now in a food processor add your flour
- And add the rest of your cinnamon
- Now add in your brown sugar and salt
- Now blend everything together
- You then want to add in your cold butter
- And blend everything together well
- Now add in your regular oats
- As well as your sliced almonds
- Give that a couple pules in the processor
- Now spread your oat mixture over the top of the pears
- Bake in the oven at 350F for 15 minutes
- Let cool and your harvest pear crisp is ready to serve

What. A. Journey. Things did not go as expected with this pie but the end product was still a perfectly edible Pear Pie. Things aren't always insta perfect, even if you have loads of practice under your belt. Like I said at the end, I wanted to hate this whole ordeal but I just couldn't because the pear pie still turned out very much delicious.

225g All Purpose Flour (1.5c)
1/2t Salt, Kosher
110g Butter, cold (0.5c)
Water, cold
Pear Filling
1 Lemon
50g Sugar, white (0.25c)
15g All Purpose Flour (2T)
7 Pears, any flavour that looks good just be sure they are semi ripe at least
Topping
70g All Purpose Flour (0.5c)
105g Sugar, white (0.5c)
1t Ginger, ground
1t Cinnamon, ground
1/4t Nutmeg, ground
1/2t Salt, Kosher
60g Butter (0.25c)
