How To make Egg Rolls 1
1 lb Package Egg Roll Skins
Egg Beaten Enough Oil To Deep-fry 1 c Diced Roast Pork
1/2 c Cooked And Diced Shrimp
1/4 c Water Chestnuts
1/4 c Shredded Bamboo Shoots
2 c Chopped Bean Sprouts, Fresh
2 Green Onion, Finely Chopped
4 Fresh Mushroom Chopped
1/2 ts Sugar
2 tb Soy Sauce
1 tb Sesame Oil
Salt And Pepper To Taste Heat the sesame oil in a large skillet. Quickly cook the bean sprouts over high heat stirring constantly. Add mushrooms, water chestnuts, bamboo shoots and cook approximately 2 minutes. Add meat, shrimp, green onion, salt & pepper, soy sauce and sugar. Remove from heat and set aside to cool. Place 2 tablespoons of the mixture in center of egg roll skin. Take the two opposite ends and fold in. Moisten other 2 edges with beaten egg. Roll into a log shape. Pre-heat oil in either a deep pot or wide deep skillet. Fry the egg rolls until golden brown turning every so often to get an even browning. Remove from oil and place on absorbent paper to drain and serve very hot.

How to Make the Best Classic Chinese Restaurant Style Egg Rolls
INGREDIENTS:
1 pkg. egg roll wrappers
slurry - 1 tbsp. cornstarch and water
1 (14oz) package shredded cabbage and carrots
1 can chopped water chestnuts
5-6 garden onions - whites and greens separated and chopped
1 tsp. minced garlic
1 tsp. minced ginger
2 tbsp. soy sauce
1 tbsp. oyster sauce
1 tbsp. sesame oil
2 tsp. sugar
1/2 tsp. white pepper
oil for frying - I use vegetable oil
In a pan on medium heat add a little oil, whites and middle of garden onions, minced garlic and ginger. Cook and stir for one minute.
Add shredded cabbage, carrots and chopped water chestnuts.
Add soy sauce, oyster sauce, sesame oil, sugar and white pepper.
Cook and stir for about 5 minutes or until the cabbage breaks down and softens.
Remove from heat and let drain and cool in collander.
Add chopped green onions and stir.
Place a couple spoon fulls of vegetables on egg roll wrapper (with corner facing toward you). Roll , tuck in sides, brush end with slurry, continue to roll until end.
Heat oil to approx 350 degrees F. Place egg rolls in oil seam side down.
Cook and turn occassionally for a couple minutes or until egg roll is golden brown. Remove from oil and let drain and slightly cool on wire rack.
Serve with your favorite condiment. Enjoy.

● Some how I skipped the part where I added the green part of the scallion to the egg roll filling during the saute. BE SURE TO ADD THE GREEN PART of scallion with the Napa cabbage saute.
INGREDIENTS
8 oz lean ground pork
1 1/2 tbsp soy sauce
1 tbsp rice wine
1/4 tsp white pepper
1/2 tsp minced ginger
1 clove garlic minced
2 tbsp whites of scallion
2 tsp corn starch
8 oz chicken thighs (or chicken breast)
2 tbsp hoisin sauce
1 tbsp ketchup
1 tbsp honey
1 tbsp rice wine
1/4 tsp five spice powder
1/4 tsp white pepper
1 to 1 1/2 lbs napa cabbage
2 stalks scallions (I added the chopped greens to filling as well)
12 to 14 egg roll wrappers
1 large egg
DUCK SAUCE RECIPE
1/2 tsp crushed minced ginger
1/2 cup (4 oz) apricot preserve
1/4 cup (2 oz) water
1 to 1 1/2 tbsp rice vinegar
