Smoked Chuck Roast For BBQ Beef & Bacon Sandwiches
BBQ Beef Sandwiches are a favorite of mine. In this video I smoke a Chuck Roast on the Weber Kettle using a new accessory called the Smoke Plate, and use the finished product, along with some grilled bacon and homemade BBQ sauce, to build some delicious BBQ Beef & Bacon Sandwiches.
Rub Ingredients
1 TBSP Granulated Garlic
1 TBSP Cracked Black Pepper
1 TBSP Paprika
2 tsp Kosher Salt
½ tsp Chile Powder
½ tsp Cumin

We think this is the best Texas chili recipe and the internet seems to agree. In this recipe, we use the flat of a brisket for creating tender morsels of chili meat that doesn't come out tasting like pot roast.
This recipe is in the style of Texas barbecue restaurants and is a chili recipe with no beans.
It's a bit like a chile con carne recipe, but we slowly simmer these chunks of beef until they are one solid soup. In fact, you might find that using an immersion blender after the chili cooking gives you even more of a Texas quality chili. Just buzz it a few times to make it extra broken up and mixed well. :)
Ingredients Used:
• 4 slices thick cut bacon
• 3-4 lb. beef brisket, trimmed
• Kosher salt, pepper, onion powder – for liberally sprinkling on the meat while browning.
• 2 c. white onion, small diced (one large onion)
• 5 garlic cloves, pressed through a garlic press
• 1 T paprika
• 1 T. cumin powder
• 3 ½ T Texas chili powder, such as Mexene or Gebhardt’s
• ½ t. dried thyme
• ½ t. chipotle chile powder
• ½ t. salt
• 1 quart beef broth
• ½ c. strong black coffee (you can save this from your morning coffee)
• 28 oz. can whole tomatoes, in juice

Thank y’all for stopping by! In this video I’m going to show you an easy cowboy-approved stew recipe that I cook on the chuck wagon on cold days. It’s hearty and you can use it with beef, elk or any meat you prefer. So take the chill off and enjoy our Cowboy Stew Recipe.

Cowboy Stew Recipe
8 regular red potatoes, chunked
2 ½ cups sliced carrots
1 large yellow onion, sliced
1 large jalapeno, chopped
3 (14.5-ounce) cans stewed tomatoes
1 (15-ounce) can tomato sauce
1 (10-ounce) can Rotel
3 (4-ounce) cans chopped green chile
2 tablespoons minced garlic
Canola oil
3.5 – 4 lbs. stew meat (elk, beef, etc.) chunked
3 quarts water or beef broth
Red River Ranch Original Seasoning or Seasoned Salt and Black Pepper
1. Add all the ingredients, except the canola, stew meat, water and seasoning to a large stock pot. Set aside.
2. Pour a thin layer of the canola oil to the bottom of a large cast iron skillet. Add the meat, season to taste and cook over medium-high heat until all the edges have browned.
3. Stir the meat into the liquid mixture. Bring to a boil over high heat for 20 minutes. Reduce to a simmer and continue cooking for about 1 ½ hours or until vegetables are tender and meat has cooked through, stirring occasionally.

This is a very basic video I decided to make showing the steps I take in cooking a chuck roast in one of my 12 lodge Dutch ovens. This is one of the more simple meals I make but over the last 20+ years I've used my Dutch oven to cook pretty much every meal I'd make in a regular oven if I were at home.
