How To make Broiled Or Grilled Marinated Chicken (Gai Yang)

-skin and fat removed A street and market food served everywhere in Thailand, this chicken is traditionally associated with the Northeast. At the train stations or bus stop, you can get a few skewers and a little bag of sticky rice for a delicious snack or light lunch. The marinade dates back to a time before the introduction of chilies by the Portuguese. Black peppercorns were used in enormous quantities, and they still have an important role in Thai cooking. Combine cilantro root, fish sauce, soy sauce, lime juice, pepper and garlic in a blender or food processor. Blend until smooth and pour into a shallow, non aluminum dish. Add chicken and turn to coat evenly with marinade. Cover and marinate in the refrigerator for at least 1 hour or up to 8 hours, turning occasionally. Preheat the broiler or prepare a charcoal or gas grill. Drain the chicken and reserve the marinade for basting. Broil or grill the chicken on a lightly oiled rack approximately 3 inches from the heat for 10 minutes. Turn the chicken and baste with the reserved marinade. Discard any leftover marinade. THAI GRILLED CHICKEN - 4 Servings

3-4 lb whole chicken (spatchcocked through the breasts)
1/2 TBSP Fish Sauce
2 TBSP Light Soy Sauce
1 TBSP Palm Sugar
1/2 TBSP Dark Sweet Soy Sauce (substitute w/ Indonesian kecap manis)
4 TBSP Water
1 Head of Garlic
1 Stalk Lemongrass - chopped
1 TBSP Whole Black & White Peppercorns
4 Coriander Roots (or 6 coriander/cilantro stems)
DIPPING SAUCE - NAM JIM JAEW

1/2 TBSP Toasted Rice Powder
1/4 TBSP Chili Powder
1/2 TBSP Sugar
2 TBSP Fish Sauce
3 TBSP Watered Down Tamarind (about this amount, but you can add more or less depending on your taste)
Few sprigs of cilantro to garnish
INSTRUCTIONS

Pound garlic, peppercorns, lemongrass, and coriander roots until rough paste forms.
Mix in palm sugar, sauces, and water.
Spatchcock chicken through the breasts.
First, make an incision through the breasts until you reach the bone. Then chop through the bone with a cleaver.
Flip and press down on the backbone to crack and flatten the chicken.
Rub the marinade all over the chicken - inside and out - and marinate overnight.
Prepare your grill and once the charcoal has greyed all over, spread it out into a thin layer.
We're grilling on low heat!
Tie bamboo sticks together with metal wiring if using. The bamboo sticks should be sitting right above the thigh and sie of the wings.
Grill skin side UP for 15 minutes then flip and add the leftover marinade to the bone side.
Flip every 15 minutes.
It should take roughly 45 minutes to 1 hour for a 3lb chicken. (1 hour - 1.5 hours for a 4-5lb chicken).
Be careful grilling on too high of a heat, the skin will burn really fast.
Combine all the dipping sauce ingredients and set aside.
Taste and adjust to your liking! It should be tangy, salty, sweet, & spicy.
Chop the chicken into manageable pieces and enjoy!

This is my Ultimate Thai Grilled Chicken Recipe, the marinade permeates to the bone and will keep your mouth watering for more.
For this recipe you will need:
1 whole chicken
2 stalks of lemongrass
2 tablespoons of peppercorns
2 tablespoons palm sugar
2 tablespoon Kecap Manis
3 tablespoons fish sauce
1 tablespoon ground coriander seeds (or coriander route if you can find it)
8 tablespoons water
TIME, at least 12 hours but aim for 24/48

Recipe:
whole chicken
vegetable oil - 1 tbsp
*need to be pounded* or finely blend them together
garlic - 30 g
coriander roots - 30 g
black peppercorns - 10 g
*marination ; seasoning ingredients*
oyster sauce - 3 tbsp
palm sugar syrup - 1 tbsp
sesame oil - 1 teaspoon
milk - 2 tbsp
soy sauce -
dark soy sauce - 1 teaspoon
- How To -
clean the chicken, cut it in half and flatten it.
pound the 3 ingredients together and set aside.
combine all of the seasoning ingredient and the pounded mixture to the chicken.
combine well and marinate overnight and at least 2 hours.
transfer it to the convection oven and cook at 175c for 25 minutes.
flip and brush the chicken with the marinade.
cook again at 175c for 20 minutes and it's done.

3 LARGE CHICKEN BREASTS
For the Marinade
1/2 cup olive oil
3 Tbs lemon juice
3 Tbs soy sauce
2 Tbs balsamic vinegar
1 Tbs Worcestershire sauce
1 tsp each garlic and onion powder
1 tsp Italian seasoning
1/4 cup brown sugar
salt and pepper to taste ( i used 1/2 tsp each salt n pepper)

Gai yang (ไก่ย่าง) is the Thai word for BBQ chicken. It is one of the most popular street foods which can be found throughout Thailand with many different types of BBQ chicken, depending on regional location and also just personal family recipes.
This recipe is from the BBQ chicken that I always get from Bangsan beach which is popular for Thai people. It’s 100 kilometers from Bangkok. It features seafood and BBQ chicken vendors. I have visited there since I was young. BBQ chicken at the street vendor is the best there…. Yum.
Grilled chicken (gai yang ไก่ย่าง) is especially common to eat along with Green Papaya Salad (Som Tum) and hot fresh sticky rice.
Ingredients
· 1.5 - 2 lb chicken – You can choose any cut of bone-in, skin-on chicken you prefer.
· 2 tbsp minced garlic
· 2 tbsp oyster sauce
· 1 tbsp soy sauce
· 1 tbsp palm/brown sugar
· 1 tbsp cilantro stem (4-5 stems)
· ½ tbsp ground turmeric or 1 tbsp fresh turmeric
· 1 tsp white peppercorns or powder
· ¼ tsp salt
· ¼ cup coconut milk or milk - If you like the rich coconut flavor, use coconut milk.
Marinate Chicken:
1. Trim any excess fat from the chicken
2. Poke with forks to get the marinade into chicken. Use a knife to cut a little next to the bone to help the chicken cook faster
3. Combine all marinade ingredients in a small bowl.
4. Marinate chicken for at least 3 hours, preferably overnight in the refrigerator. Bring them to room temperature before cooking.
Grilling:
1. Preheat your grill medium low 250 – 300 F (120 – 150 C) Clean & oil the grill.
2. Place chicken skin side up, cover it, check and flip over from time to time every 3-5 minutes. Coat chicken with the leftover marinade for more flavor and moist.
3. Total grill time is about 20 – 30 minutes depending on the size of the chicken or until cooked. If the chicken reaches 165 F, it’s cooked.
Air Fryer:
1. Preheat your air fryer to 370° F
2. Please chicken skin side down onto the basket. Air fry for 10 minutes then flip to the other side and air fry for another 10 minutes. Coat chicken with the leftover marinade for more flavor and moist.
3. Check if it’s cooked by checking the temperature 165 F. If it’s not fully cooked, just air fry a couple minutes more each side until it’s cooked.
Serve: Normally served with steamed sticky rice, steamed jasmine is fine as well. Excellent with Thai Papaya Salad
