How To make Brie and Bacon Omelet
2 tb Butter
2 tb Chopped green onion
4 Eggs
1/4 c Milk
3/4 ts Pepper
2 oz Chopped brie, skin removed
4 sl Bacon, cooked and crumbled
3 tb Chopped toasted pecans
Fresh fruit if desired Melt butter in a 10-inch ovenproof skillet or omelet pan, tilting pan to coat bottom and sides. Saute onion until tender, about 3 minutes. Combine eggs, milk and pepper. Increase heat to medium to high. Pour egg mixture into skillet. Stir once nad cook until edges begin to set. using a fork, gently pull the edges of the eggs away from the sides of the pan so that the uncooked portion flows under the cooked edges. Continue until most of the egg mixture is set but the surface of the omelet is slightly wet. Sprinkle cheese, bacon and nuts over the top of the omelet. Fold in half; cut into two pieces. Garnish with fresh fruit. Serve immediately. -----

Omelet With Brie Cheese & Pears Recipe

Ingredients
For 1 omelet
???? Eggs - 2 pc
???? Salt - 1 tsp
???? Dried Italian herbs - 1 tsp
???? Milk - 20 ml
???? Fresh dill - 1 pc
???? Fresh parsley - 1 pc
???? Butter - 15 g
???? Brie cheese - 50 g
???? Pear (fresh or canning) - 1 pc
Break two eggs into a bowl. Add salt, dried Italian herbs. Beat with a whisk. Add milk. Whisk everything together.
Add fresh chopped dill and parsley. Whisk everything together.
Heat a frying pan over medium heat, add butter, let it melt.
Pour the omelet into the frying pan and stir from the edges to the center until it sticks to the pan. This should be done quickly. Then leave it, and let it fry for 3 to 4 minutes, occasionally scraping the omelet off the edges to keep it from sticking. Add slices of brie cheese and sliced pear in the middle. Fry for another 3-4 minutes.
The omelet should slide easily across the pan.
Place the cooked omelet on a plate, and close on both sides toward the middle, as if making a roll.
