French Baked Brie with Cranberries, Walnuts and Honey
A magical warm soft cheese recipe for the winter months. There’s no better holiday appetiser especially in Winter, for Christmas or thanksgiving. What could be better than warm melty cheese (not melted) over crispy croutons or crackers. With a hit of tangy fruit, sweetness of honey and saltiness of the cheese, it’s an explosion of festive flavours with each bite. It’s a good idea to let the Brie rest a few minutes before digging in so it’s not too runny.
Ensure you don’t over bake it or it will be a mess, I would suggest staying glued to the oven for a few minutes. When it starts to melt on all the edges, it’s ready.
Enjoy it this winter or anytime you like as I can eat this all year round.

Because the brie is so soft and creamy, it can be tricky to cut at room temperature. Freezing your wheel or wedge for just 20 minutes makes slicing it into small pieces a breeze. This finger food idea is easy enough to make for short-notice visitors but elegant enough to serve at a the holiday cocktail party. Just be sure to make plenty because they always go fast!
What pairs well with brie?
Rich brie is wonderful alongside something sweet, tart, and fruity, such as cranberry sauce in this recipe! Because it's a soft, creamy cheese, brie also pairs well with contrasting textures, such as crunchy nuts and flaky puff pastry. Basically, this easy appetizer has everything you could want!
Should you use homemade or store-bought cranberry sauce?

Do you take the rind off the brie before baking?
It's totally up to you. The rind is 100% edible and can be left on, but if you prefer eating brie without it, slice it off before cutting it up into cubes (and after it's been frozen for a bit).
Can you freeze cranberry brie bites?
Yes! Line the muffin tin with pastry squares and stuff with cheese as directed, then cover with plastic wrap and freeze for up to one week. Top with cranberry sauce and pistachios right before baking.

1 sheet frozen puff pastry, from 1 (17 oz.) box
Nonstick cooking spray
4 oz. brie cheese
1/2 c. cranberry sauce, homemade or canned
3 tbsp. raw shelled pistachios, chopped
Flaky sea salt and ground black pepper, optional

Thaw the puff pastry according to package directions.

Preheat the oven to 400°F. Spray a 24-well mini muffin pan with nonstick cooking spray. Place the brie in the freezer for 20 minutes or until firm to the touch.

On a well floured surface, roll the sheet of puff pastry into a 10-by-15-inch rectangle. Cut the pastry into 4 strips lengthwise. Then, cut the pastry crosswise into 6 strips, creating 24 squares. Press the pastry squares into each well of the muffin pan, letting the excess stick up over the edges.

Cut the firm brie into 24 (½-inch) slices. Place a piece in the center of each pastry square. Top each with about 1 teaspoon of cranberry sauce. Sprinkle with chopped pistachios.

Bake for 15 minutes or until the puff pastry is golden brown on the edges and the cheese is bubbly. Let cool in the pan for 5 minutes. Remove the bites from the pan and garnish with sea salt and pepper, if desired.
Tip: If you already have toasted pistachios in your pantry, use those! Just sprinkle over top of the bites after baking.
