Blueberry Delight Pie
Dessert Name: Blueberry Delight No-Bake Pie
The Subscribers has been asking on many different desserts if Blueberry could be substituted in place of other fruit pie fillings I use! Well, here is my popular Strawberry Delight No-Bake Pie with substituting Blueberry pie filling as the fruit! It turned out amazing as well. That’s all that has to be said!
Dessert Ingredients:
-1 Tub (8 oz) Cool Whip
-1 Graham Cracker Crust
-1 Can Blueberry Pie Filling
-1 Cup Powdered (Confectioners) Sugar
-1 Block Cream Cheese
Dessert Instructions:
-Start with placing the Cool Whip into a mixing bowl
-Also add in 1 Block of Cream Cheese, and mix with a mixer until
the ingredients is combined
-Measure out 1 Cup Powdered Sugar, and add into the mixing bowl as well
-Again, mix with a mixer until very creamy
-Now hand mix in the Blueberry Pie Filling in with the other mixture. Hand Mix well
until all ingredients are blended well
Scoop and spread mixture into the Graham Cracker Crust evening it out as you go
-Chill in fridge until ready to serve

Blueberry Slab Pie
Serves 12-15
Special Equipment: Shallow 13x9 baking dish or Made In baking slab
PIE DOUGH
5 cups all-purpose flour (675g)
3 tablespoons granulated sugar
2 teaspoons Diamond Crystal kosher salt or 1 teaspoon Morton kosher salt
4 sticks unsalted butter, chilled, cut into ½-inch pieces
FILLING AND ASSEMBLY
2¼ pounds frozen blueberries, preferably wild
⅔ cups granulated sugar
¼ cup cornstarch
1 tablespoon finely grated lemon zest
¼ cup fresh lemon juice
2 teaspoons vanilla extract
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1 teaspoon Diamond Crystal kosher salt or ½ teaspoon Morton kosher salt
¼ teaspoon ground cardamom
1 large egg, beaten
Demerara sugar, for sprinkling the top
Heavy cream, chilled, for serving

Ingredients
2 Pie crust recipe you will need two standard sized pie crusts, you can use store-bought or click the link to make my easy pie crust, the recipe will need to be doubled.
5 heaping cups fresh blueberries washed and picked over (just over 1.6 lbs, or 730g)
3 Tablespoons cornstarch
⅔ cup granulated sugar 135g
¼ teaspoon salt
1 ½ Tablespoons lemon juice
1 egg
2 teaspoons water
1 ½ Tablespoons butter cut into small pieces
Granulated sugar for sprinkling
Instructions
00:00 Introduction
00:15 First make your pie crust according to recipe instructions (in link in Ingredients). Allow to chill as instructed (skip this step if using store-bought pie crust).
03:17 Preheat oven to 375F (190C).
03:23 While pie dough is chilling, combine blueberries, cornstarch, sugar, salt, and lemon juice in a large bowl. Stir well until ingredients are well-combined, then set aside until your pie dough is finished chilling.
04:09 Once dough has chilled, place one pie crust on a clean, floured surface and roll out into a 12” circle and place into a 9” pie plate (there should be some dough left hanging over the sides of the pie plate, this is good, don’t trim it, you’ll need it later).
05:00 Give your berries one more stir and then pour evenly into pie dish. Dot the top of the berry layer with your butter pieces.
05:22 Roll out your second pie crust to a 12” circle. To make a lattice-designed topping, use a knife, pizza cutter, or pastry wheel (see link above recipe for the one I used) and cut 1” strips out of the pie dough.
06:12 Follow the photo instructions in the post above to make a lattice pattern by evenly spacing 5 pie strips horizontally and weaving vertical strips through pie dough (see photo in post or see the video below the recipe for visual).
07:23 Trim excess pie dough from the strips and then take the excess pie dough (hanging over the pie plate from the first crust you placed) and fold that over the edge of the strips (again, see photo or video for visual guidance).
07:55 Whisk together your egg and 2 teaspoons of water to make an egg wash.
08:09 Brush lattice topping with egg wash. Generously sprinkle with granulated sugar, if desired.
09:12 Transfer to 375F (190C) oven and bake for 50 minutes or until crust is golden brown and center of pie is bubbling.
09:26 Allow to cool before slicing and enjoying! If desired, top with vanilla ice cream or homemade whipped cream!

Blueberry Cream Cheese Pie
Ingredients:
1 Graham cracker pie crust 9 inch
1 Philadelphia Cream Cheese 8 oz.
1 Can Eagle Brand sweetened condensed milk
1/3 cup lemon juice
1 tsp vanilla flavoring
1 Can Blueberry Pie Filling
Directions:
Mix the cream cheese and condensed milk together
Add the lemon juice and vanilla flavoring
Mix until smooth
Put the cream cheese mix into the pie crust
Refrigerate 3 to 6 hour until the cream cheese sets
Put the blueberry pie filling on top
Refrigerate until ready to serve ( I usually let it refrigerate overnight)
Serve and Enjoy !!!
