How To make Special Sugar Cookies
1 cup butter or margarine
1 cup white sugar
1 cup vegetable oil
1 cup powdered sugar
2 eggs
1 teaspoon vanilla
4 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt
Cream butter and white sugar. Beat in oil and powdered sugar until smooth. Add eggs and vanilla and beat well. Mix flour, soda, cream of tartar and salt toget her and stir into mix. Drop by teaspoonfuls onto ungreased baking sheet. Flatte n cookies to 1/4-inch thick with glass bottom dipped in sugar. Bake in 350 degr ee oven 8 to 10 minutes until lightly browned around edges.
Makes 6 to 7 dozen 3-inch cookies.

Sugar Cookie Recipe:
Ingredients
1 cup of softened unsalted butter (227 grams)
1 and 1/2 cups of sugar (300 grams)
2 eggs room temperature
2 teaspoons of pure vanilla extract
3 and 1/2 cups of all purpose flour (450 grams)
1/2 teaspoon baking powder
1/4 teaspoon salt
Method
1. In a stand mixer with a paddle attachment, beat the butter and sugar until light and fluffy
2. Add the eggs one at a time. Beating each time until just combined
3. Add vanilla extract and beat until combined
4. Mix baking powder, salt and flour.
5. Add flour mixture to butter mixture about 1/2 cup a time.
6. Turn mixer back on, and mix until everything is combined. Once your mixer can’t do anymore, mix with your hands until you have a smooth dough if needed.
7. Separate dough quarters and wrap each quarter in plastic wrap. You want each quarter to resemble a pancake for easy rolling.
8. Refrigerate for about one hour or until firm enough to roll.
9. Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. Line your baking sheets with parchment paper.
10. Remove one quarter of the chilled dough and, on a lightly floured surface, roll out the dough to a thickness of about 1/2cm using a floured rolling pin. Keep turning the dough as you roll, adding more flour if needed, making sure the dough does not stick to the counter.
11. Cut out desired shapes using a lightly floured cookie cutter and transfer cookies to baking sheet.
12. Place the baking sheets with the unbaked cookies in the refrigerator for a minimum of 15 minutes. This will help cookies retain their shape while baking. (I like to do an hour for more complicated shapes).
13. Bake for 10minutes. (Could be anywhere from 8-14minutes). It depends on the size of your cookie and your cookie sheet or even your oven! For smaller cookies I would start checking at 8 min. Cookies will be done when edges are just starting to brown.
14. Remove from oven and let cookies cool on baking sheet for a few minutes before transferring to a wire rack to finish cooling.
15. Once cooled, frost with royal icing.

Cookie Recipe ( Crispy melt away cookie BASE dough) :
- 750 gr soft room temp Butter ( 6 2/3 sticks )
- 300 gr Powdered Sugar ( 2 1/2 cups)
- 3 room temp X Large Egg Whites
- 900 gr All purpose Flour ( 6 cups + 1/2 cup)
- 3 tsp Vanilla
- 1/4 tsp Salt

Divide the dough into 5 equal portions and with each dough make 5 different cookies:
■ Vanilla Butter Cookies:
Leave the first dough as is.
You'll need a piping bag and a tip of your choice.
■ Linzer Cookies:
to the second cookie dough, add:
- 60 gr Almond Flour (1/2 cup)
- 40 gr All Purpose Flour ( 4 tbsp)
- 1/2 tsp Almond Extract
- Jam of your choice
■ Gingerbread *Style* Cookies:
to the third cookie dough, add:
- 2 3/4 tsp Ginger
- 3 tsp Cinnamon
- 2 or 3 tsp Cocoa Powder
- 40 gr Flour ( 4 tbsp)
For stronger gingerbread flavor add more ginger.
■ Sugar Cookies:
to the fourth cookie dough, add:
- 50 gr All Purpose Flour ( 5 tbsp)
- 1/2 tsp Vanilla
■ Chocolate Sugar Cookies:
to the fifth cookie dough, add:
- 60 gr Sweetened Cocoa Powder ( 7 1/2 tbsp) ( Bloom the cocoa with 5 tbsp hot Milk) If you're using UNsweetened cocoa powder you may have to add 1 tbsp more icing sugar.
- 20 gr All Purpose Flour ( 2 tbsp)
- Melted good quality chocolate to fill the cookies

The Best Sugar Cookies to Decorate with Royal Icing (No Spread!!)
If you´re curious to see how I make my cookies, and how they keep their shape, well look no further! I use a common recipe but have made a few simple tweaks to make these delicious, no spread cookies a sure hit!
My favourite part is that it calls for brown sugar (I prefer using dark brown sugar), it gives it so much flavour and a beautiful golden colour. These cookies are great for decorating with royal icing as they can be handled and transported easily without worrying that you´ll break them but still maintain a softer bite! They aren´t too sweet, so once they are iced, they taste amazing. And if you're scared of too much puff, you can reduce the amount of baking powder from 1tsp as said in the video to 1/2 tsp.
The changes I've made to the recipe:
- add dark brown sugar instead of golden brown sugar
- add 2 teaspoons of butter emulsion flavouring in addition to the vanilla
- add 1/2 to 1 teaspoons of baking powder instead of 1/4
