How To make Corn and Marigold Fritters
8 oz Sweetcorn kernals
4 tb Double (heavy) cream
1 tb Flour
1/2 ts Baking powder (or soda)
Sea salt White pepper 1 tb Marigold petals *
1 tb Sunflower oil, or more
*NOTE: Make certain that you use a pot marigold (Calendula) rather than an African marigold (Tagetes). This is an excellent supper dish, which children will enjoy. Serve the fritters with a hot green vegetable or salad and brown bread and butter. Put the sweetcorn in a bowl and pour over the cream. Sift in the flour and baking powder (soda) and season to taste. Stir in the marigold petals. Set a large, heavy frying pan over high heat and pour in the oil. Drop spoonfuls of the fritter mixture into the oil and fry until golden on both sides, turning once. Press the mixture flat with a spatula to give a lacy effect at the edges. Cook the fritters in bunches until all the mixture is used up, adding more oil to the pan if necessary. Serve hot. Yummmyyyyy Indonesian Perkedel Jagung/Corn Fritter Recipe
Perkedel Jagung/bakwan jagung is one of popular appetizers in Indonesia. The taste is so good that will make you want to crave more and more. Perfect company for your afternoon tea time. And don't forget to eat them with your favorite chili.
The one I share with you is easy and simple to make.
Recipe :
Ingredients :]
3 ears fresh corn, kernels removed from the cob.
Or you can use 200 gr of canned corn kernels
1 stalk scallion/spring onion, chopped finely
1 large egg, beaten
1 1/2 tsp salt
1 tsp white pepper powder
1/4 cup of milk/water
1/2 cup scallion pancake flour
Or you can use the mixing of 1/4 cup all purpose flour + 1/4 cup rice flour.
If you use mixing flour, you need to add ;
3 cloves garlic, minced
6 shallots, mince
1 tsp coriander
Instruction:
1. Place the corn kernel in a bowl, add the scallion
2. Add the rest of the ingredients except the oil and mix well into a thick batter
3. Heat oil to 170 Celcius (340 Fahrenheit) for deep frying.
4. Using a laddle, drop spoonful of batter into the hot oil and fry until batter turns golden brown, about 2-3 minutes each side. Drain and cool on a wiring rack. Repeat until all batter has been used up. Serve hot with bird eye chili or tomato sauce and chili sauce.
ps. You can pan fry the fritters too if you don't want to deep-fry them. Just put a bit of oil on a non-stick skillet and let them brown on both sides and make sure the middle is cooked through
