Directions: In a saucepan cook butter & sugar, boiling 5 minutes. Stir in almonds & cook 10-20 minutes or until nuts begin to pop & turn brown. Pour into a shallow pan & let cool. Melt chocolate & pour over mixture in pan. Sprinkle with finely chopped walnuts. After mixture hardens, turn over and sprinkle bottom side with walnuts. Break candy into pieces.

Dark Chocolate Peanut Brittle
Dark Chocolate Peanut Brittle
Our peanut brittle recipe is smothered in dark chocolate. An easy recipe that is great for the holidays or anytime of year.
Ingredients: 1 1/2 cup- sugar 2 cup- shelled peanuts 1/2 cup- water 3/4 cup- light corn syrup 1 1/2 tsp- baking soda 1 TBSP- butter 1/2 tsp- kosher salt 1 tsp- vanilla extract 2 cup- dark chocolate melting wafers
Method: combine sugar, water and corn syrup in a heavy sauce pan over medium heat. Stir until the sugar dissolves. Place a candy thermometer in the mixture and heat On med- high until it reaches 250 degrees. Once the mixture has reached the desired temperature, reduce heat back to medium, add peanuts, butter and salt. Stir together well. Return heat to med- high and cook the candy until it reaches 300 degrees. Stir frequently as the candy begins to turn caramel in color. Remove from the heat, add vanilla and baking soda. Note- baking soda will create a foamy texture, continue to stir until well combined. Transfer the candy onto a 9x13 baking sheet that is well coated in pan spray or butter. Smooth the mixture with a spatula. Let the mixture cool completely, for about 45 minutes. Let the chocolate in a double boiler until smooth. Drizzle chocolate onto brittle and smooth with a spatula. Let cool again for 30 minutes. Break apart brittle and serve.
Notes- We sprinkled a little sea salt on the chocolate while it was still warm. Once your candy is ready, spread on cookie sheet immediately, it will harden very fast. You can also melt your chocolate in a microwave, read the instructions on the package.

This week i made almond brittle. Almond brittle is a delicious treat with a caramel butter toffee in the middle surrounded with chocolate and almonds on both sides. It was really amazing and I hope you try it!
