Ingredients:
3 Stalks of Green Onion
3/8 of Green Bell Pepper
3/8 of Red Bell Pepper
1 Medium Sweet Onion
4 Slices of Thick Cut Bacon
1 Pound of Ground Beef
3/4 of Jimmy Dean Sausage *HOT*
2 tbsp of Italian Seasoning
2 tbsp of Garlic Powder
2 tbsp of Parsley
1 tsp of Adobo
1 tbsp of Lawry's Seasoned Salt
1 tbsp of Ground Thyme
1 tsp of Crushed Red Pepper
2 tbsp of Onion Powder
1 tbsp of Oregano Leaves
2 Large Eggs
1 cup of Bread Crumbs
1 tbsp of Olive Oil
2 cups of Mozzarella Cheese
1/3 cup of water
2 slices of unsalted butter
2 cups of BBQ Sauce
Directions:
Chop vegetables into small pieces
Add bacon to pan & and let cook until done
Set oven to 350 for preheating
After removing bacon add diced vegetables to pan and let cook until soft
Add ground beef, and jimmy dean hot sausage to a bowl
Add seasonings of choice
Add large eggs
Add cup of bread crumbs
Add one tbsp of olive oil to pan
Cut bacon into small bite size pieces
Add one layer of meat to the pan, and flatten
Add Mozzarella Cheese on top
Add bacon bites on top of cheese
Add top layer of meat and form and shape meatloaf
Add 1/3 cup of water and 2 slices of unsalted butter
Cover with foil then place in oven for 1 hour
Uncover and put BBQ sauce on top
Place back in oven uncovered for 30 minutes.
Once done let sit for 15 minutes, then Digg in!
Serve with red potatoes and veggies!

Mozzarella-Stuffed Meatloaf!
Mozzarella Stuffed-Meatloaf is a great way to put dinner on the table during a busy work week and you have most of items in your pantry and/or refrigerator. Made with ground beef, Italian seasoning, BBQ sauce and mozzarella cheese. White onion, red and yellow bell peppers round out the list of flavorful ingredients that makes this meatloaf a favorite amongst my family and friends. The mozzarella cheese stuffed inside this meatloaf creates magic to the overall unique flavor profile of this meatloaf. I urge to try this recipe as I am sure your friends and family will enjoy it any night of the week.
Here is the recipe:
906g/ 2lbs ground beef
113g/ 4oz mozzarella cheese (cubed)
114g/ 2 large eggs
84g/ 2/3 cup white onion (chopped)
98g/ 2/3 cup yellow and red bell pepper
28g/ 2 tbsp. vegetable oil
4g/ 1 tsp minced garlic
4g/ 1 tsp salt
4g/ 1 tsp pepper
42g/ 3 tbsp. BBQ sauce
8g/ 2 tsp Worcestershire sauce
8g/ 2 tsp Italian seasoning
4g/ 1 tsp crushed red pepper
56g/ 1/4 cup BBQ sauce (basting meatloaf)
Preheat oven to 350F/176C degrees
Bake for 50 minutes and remove
Baste meatloaf with BBQ sauce
Return to oven and bake for an additional 10 minutes
Mozzarella-Stuffed Meatloaf should have a temperature of 160F/72C degrees for doneness.
Allow meatloaf to rest for 10 minutes before serving.
Serve with your choice of side dishes.
Can be frozen and re-heated for a later date.

Prosciutto Spinach and Mozzarella Stuffed Meatloaf ????
If I have learned anything about historical cooking, it is that people for generations have loved meat wrapped around things, or even things wrapped around meat. While we do not typically see “stuffed” meat at many meals nowadays, you can still find little savory pies for sale at restaurants or served at the supper table.
Simple to make yet complicated to look at, this dish is one that my family absolutely loved and devoured. They all looked at it with a bit of apprehension, but trusting my abilities, all ate it with faith and ended up big fans of the stuffed meatloaf.

Bacon Wrapped Meatloaf: moist and juicy on the inside, and crunchy on the outside!
Forget tough, dry meatloaves! This will be the most flavorful meal ever!
INGREDIENTS 2 lb ground beef
2 eggs
1 cup breadcrumbs
2 tsp salt
1 tsp pepper
2 tsp garlic powder
4-6 slices ham
8-10 slices cheese
2 cups spinach
10-12 slices bacon
METHOD
In a large bowl, combine ground beef, eggs, breadcrumbs, salt, pepper and garlic powder. Mix until well blended. Place the mixture in the middle baking sheet lined with baking paper.
Add the ham, cheese and spinach on top of the meat.
Roll the meat.
In another baking sheet with baking paper, put slices of bacon. Place the meatloaf on top of the bacon. Roll the meat with bacon, then wrap in foil.
Bake the roll with the aluminum wrap for 25 minutes at 350˚F/180˚C.
Raise the temperature to 500˚F / 260˚C. Remove the foil and bake for 20 minutes.

Spinach and Mozzarella Meatloaf
Serves: 1 loaf about 8 slices
Calories: approximately 444/ slice
Time: 1 hour 20 minutes
Ingredients:
1.5 lbs ground beef
2 cups of finely chopped spinach
2 cups bread crumbs
2 cups shredded mozzarella cheese, divided
1 onion, finely chopped
3 cloves of garlic, minced
3 eggs, lightly beaten
1 tsp salt
freshly ground pepper to taste
Directions:
1. Adjust oven rack to the middle and preheat oven to 350 degrees F.
2. In a large bowl mix together ground beef, spinach, bread crumbs, 1.5 cups of the mozzarella cheese, onion, garlic, eggs, salt, and pepper. Mix well but do not over-mix as you run the chances of drying it out.
3. Transfer this mixture to a loaf pan and sprinkle the remaining mozzarella over the top of the loaf.
4. Make a tent over the pan with foil. Don’t let the foil touch the cheese on top of the loaf because it will just stick to the foil and peel off.
5. Bake for 1 hour
6.Remove the loaf from the oven and take off the foil. Place loaf back in the oven and bake for an additional 15 minutes.
7.) Slice, plate, and enjoy!
