In this vlog I will bake zucchini bread with cream cheese filling. I first tried this on Tuesday and after 3 days I bake another one. On my second try I added sour cream to the mixture. Whoala, it turned out to be more yummylicious and so moist. The cinnamon powder added a great taste to the bread.
If you want to use a muffin pan, it will yield 10-12 muffins. With the same temperature as mentioned in the video though you need to adjust the baking time to about 25-30 minutes only. But always do a toothpick test to check the doneness of the muffin. Hope you can try this and let me know in the comment. Happy Eating.

Ingredients:
BREAD MIXTURE
1/2 cup vegetable oil
1/4 cup brown sugar
1/4 cup granulated sugar
1 whole egg (room temperature )
1/2 tbsp vanila
1 1/4 cup grated zuchinni
1/2 cup roasted pecan nuts
1 1/2 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsps ground cinnamon
CREAM CHEESE FILLING:
5oz cream cheese
1 egg yolk
3 tbsp granulated sugar (or evaporated milk
1 tbsp cream (optional)
BAKING TIME & TEMPERATURE
Pre-heat oven at 425°F bake for 5 minutes. Reduce the temperature to 350° and continue baking for 45-55 minutes. Do a toothpick test for doneness.

QUICK LUNCH IDEA! SAVORY CHEESY ZUCCHINI BAKE
This zucchini bake recipe is perfect for breakfast or even lunch because it is easy to make, light, nutritious, and delicious! You can make it gluten-free, if you use rice flour, chickpea flour, or a gluten-free flour mix, also, you can add different types of veggies, add cheddar cheese, and anything your imagination calls for!
INGREDIENTS:
3 small zucchinis, grated
1/2 cup of unsweetened vegetable milk
1 cup of all-purpose flour - or any flour of your choice
1/4 cup nutritional yeast or shredded vegan mozzarella
1 tsp baking powder
1/4 cup of chopped fresh parsley
Salt to taste plus some more for salting the raw zucchini
Black pepper to taste
1/4 cup of vegetable oil
METHOD:
Grate the zucchini, sprinkle with salt, mix well and let it sit for 15 minutes. Squeeze the zucchini, try to remove as much water as you can, transfer into a bowl, then add all the remainder of the ingredients, and mix well.
Grease a baking dish, add the zucchini batter, flatten the top, and put it in the oven at 180C / 350F for about 30 minutes.
CUPS CONVERSION:
1 cup = 250 ml / 8.45 oz
1/2 cup = 125 ml / 4.22 oz
1/3 cup = 85 ml / 2.87 oz
1/4 cup = 60 ml / 2.02 oz

Small Zucchini Breads with Greek Feta cheese and Fresh Thyme - Recipe
A delicious way to make your own breakfast bread ! Try to make these little wonders and you'll never stop making them !
INGREDIENTS & QUANTITIES (for about 15 - 16 small breads):
4 medium size Zucchini
250gr or 0.60 lb Greek Feta cheese
3 1/4 cups Corn Flour
3 cups Weat Flour
1 1/2 tbsp Sea Salt
3 tbsp Dry Yeast
2 tbsp Fresh Thyme leaves
3/4 cups Water
RECIPE TIPS !
1. After you shred the zucchini press them a bit it in a colander to let their juice strain and let them in the fridge for a couple of hours.
2. The mix will seem that needs more water at first. DO NOT add more. The shredded zucchini will give the moisture the mix needs.
3. Bake them until they get gold outside and enjoy them warm !

Cheesy Zucchini Bread

A tender bread dough specked with hearty shredded zucchini, cheese, and green onions. Cheesy, moist, and oh so delicious! This is a great one if you're trying to get kids (or adults haha) to eat their veggies, because they won't have a clue that there's zucchini in it.

RECIPE
INGREDIENTS
1 cup, grated Zucchini
1.5 cups, All Purpose Flour
1 tsp, Salt
1/2 tsp, coarsely ground Black Pepper
1 tbsp, Baking Powder
2 large Eggs
1/2 cup, Milk
1/4 cup, Olive Oil
1 cup, grated Sharp Cheddar
1/4 cup, chopped Green Onions
METHOD
Preheat oven to 350 degrees and grease a loaf tin with butter.
Place grated zucchini in a colander, and grab a fistful and squeeze out as much of the juice as possible. Repeat with remaining grated zucchini.
In a bowl whisk together flour, salt, black pepper, and baking soda until well mixed.
In a large bowl whisk together eggs, milk, and olive oil. Stir in grated zucchini, then add in dry ingredients. Mix until no white streaks of flour can be seen.
Then add cheese, and green onions, and fold to evenly distribute.
Transfer batter to loaf tin, smooth top, and bake for 50 minutes. Invert onto a cooling rack and allow to cool for a minimum of 10 minutes. Cut into slices and enjoy! :)
