Southern Style Pimento Cheese ~ Pimento Cheese Spread Recipe ~ Noreen's Kitchen
Today I am sharing a redo of sorts. I have presented pimento cheese twice in the past ten years I have been on YouTube. The first was very early with a bad camera and little knowledge of how to actually do this YouTube thing. The second was a bit more seasoned but not the best quality. The recipe stands the test of time. It is still as delicious as ever. It still a southern staple and I once again present this amazing and might I add, addictive cheese spread to you. I have also since learned a bit of history about pimento cheese that is both fascinating and interesting.
This spread is something I knew nothing about when I first moved to North Carolina from Arizona 12 years ago. One taste had me asking where has this been all my life?. This cheese spread is seriously deliicous. Tangy from sharp cheddar, creamy from cream cheese and full of roasted red pepper or pimento goodness. Definitely something everyone should try at least once. When you do you will wonder what else you can put this on! For me a spoon is good, but I will reach for the crackers as not to look barbaric.
The origins of pimento cheese are not really southern. They started in the late 1800s when farmers began producing what was called hoop cheese or farmer's cheese. A soft, cheese made from the remaining whey leftover after making cottage cheese. This was pressed into hoop molds and cooled. It was not aged and it was smooth. It was the precursor to what we know as cream cheese.
About the same time pimientos began being imported from Spain and people just loved them. Sweet, roasted and peeled red peppers were used in many recipes once they hit the market. In the early 1900's Good Housekeeping magazine published the first recipe for Pimento Cheese. It contained hoop cheese, pimentos and sharp cheddar cheese, along with dry mustard, chives and other seasonings. Very simple but it took off like a shot and soon manufacturers were making the spread on the commercial level. Brining the tangy creamy spread to the masses via supermarket shelves.
While pimento cheese may not have originally been a southern staple, it quickly became associated with the south due to the fact that farmers in Georgia began growing the peppers stateside and producing canning the peppers in mass quantities for home cooks to use. Thus a southern tradition was born.
There are a few things that are associated with the southern table. Cheese straws, juleps, whole hog barbecue and pimento cheese are some of them. No one can deny the deliciousness of these foods and even if you have never traveled to the south, you can have a little bit of it on your table when you make this spread.
Don't limit yourself to crackers, even though it is enough. Think about making a grilled cheese with this spread! Put it on your burger or spread it on your ham sandwich. Make pinwheels with large tortillas and roll them up with this delicious spread inside. Stuff into celery or use it to make canapes'. No matter what you do, you are going to love this cheesy spread!
I hope you give this southern style pimento cheese a try sometime soon and I hope you love it!
Happy Eating!
