How To make Zesty Pot Roast
-From the Kitchen of -Lawrence & Cindy Kellie 4 lb Beef chuck are pot roast
-boneless 2 tb Cooking fat
Salt Pepper 1/2 c Onion; chopped
10 3/4 oz Tomato soup; condensed
1 ;soup can water
1/4 c Vinegar
1 c Applesauce; canned
1. In a Dutch oven, or large pan with a tight-fitting cover, brown meat in
fat. Season with salt and pepper and remove from pan. Pour off fat drippings. 2. Cook onion in drippings remaining in pan until soft but not browned; stir often. 3. Add tomato soup, water, and vinegar; mix well. 4. Return meat to pan. Cover and simmer for 2 1/2 to 3 hours, or until done. (Or cook in a 325F oven for same amount of time.) 5. Turn meat once to cook it evenly throughout. When done, remove meat and keep warm. 6. Skim off excess fat. Add applesauce and cook to desired consistency. Taste sauce and correct seasoning, if necessary, with salt and pepper. 7. Slice meat and serve with sauce. Zesty Prime Ribs
Ingredients
7 lb. bone-in prime ribs
For the Buttery Rub
20 to 25 cloves garlic
2 small or 1 large shallot
handful of cilantro
1 cup melted unsalted butter
1/2 cup fish sauce (Recommend 3 crabs brand)
fresh juice from 1 lime (Optional. If you want more richer flavor, skip lime)
2 Tbsp salt
2 Tbsp black pepper
For the Roast Vegetables
1 bulb garlic, cut into halves
1 red onion, cut into quarter
2 small carrots, cut into halves
For the Gravy
8 Tbsp all propose flour (Plus more as needed)
4 cups water

Crock Pot Roast and Tips!
Recipe below for our easy Crock Pot Roast!
1 teaspoon garlic powder
1 teaspoon celery salt
1 teaspoon ground thyme
1 tablespoon smoked paprika
2 tablespoon coarse ground pepper
1 tablespoon seasoned salt
3.5 – 4 lb. bottom round roast
Lime juice
6 garlic cloves
2 cups beef broth
2 tablespoons canola oil
3 Russet Potatoes, sliced
6 -8 Carrots, sliced
2 yellow onions, sliced
2 bay leafs, crumbled
1 guajillo pepper, chopped
-In a small bowl, combine the seasonings and set aside.
-Rub lime juice on all sides of the roast. Generously sprinkle with the seasoning blend and rub to thoroughly coat all sides. With a small knife make small holes in roast and push garlic cloves into the meat, equally on both sides.
-Cover and place in icebox for at least 3 hours
-Remove the roast from the icebox about 30 minutes before cooking. Meanwhile, turn crockpot on high and add the beef broth to warm.
-Add about 2 tablespoons of the oil to a large cast iron skillet and heat over high. Sear the meat, rotating to brown all sides, roughly 3 minutes per side. Set aside.
-Add the bay leaves to the beef broth, then place the roast, fat side down, in the crock pot. Add the veggies to the sides and on top. Season the top of additional seasoning blend. Cover with the lid.
-Cook on high for about 6 hours or on low for about 8 hours. Depending on the size and thickness of the roast you may need to alter your cooking time. I checked the roast about 5 hours in and reduced it to low for an additional 1 – 1 ½ hours. Cook until the veggies are done and the meat is fork and pull apart tender.
Other types of roast to use: top or bottom round, chuck, arm. The size will vary your cooking time.
