If you’re looking for whole wheat pancakes with 100% whole wheat flour, this one will do it for you. With all whole wheat, the pancakes are quite fluffy and taste great. We absolutely love the nutty flavor of the flour.
You can also use half whole wheat and half all-purpose flour. If you’re not used to using whole wheat flour in your kitchen, we suggest you use 50% whole wheat and 50% all-purpose flour.

Ingredients:
1 1/2 Cups Whole Wheat Flour (210g)
1 Tablespoon Sugar (16g) *Optional, don't add if using sweetened almond milk.
2 Teaspoons Baking Powder (9g)
1/4 Teaspoon Baking Soda (1.25g)
1 Ripe Banana
1 Teaspoon Vanilla Extract (5ml)
1 Tablespoon + 1 Teaspoon Olive Oil (20ml)
1 1/2 Cups Almond Milk (360ml)
Directions:
In a bowl, whisk together the flour, baking soda, baking powder, and sugar. Set aside.
In another larger bowl, mash the banana. Add the vanilla and olive oil, whisk until combined. Whisk in the almond milk.
Fold in the dry ingredients to the banana mixture and stir just until combined.
Heat a pan or griddle using medium to low heat, spray with cooking spray. Spoon the pancake batter onto the pan and spread into a circle if needed. When the surface starts to bubble and the edges of the pancake are dry, flip the pancake over to finish cooking. Repeat with the rest of the batter.

Let's make a whole wheat pancakes recipe for two people today. I am using spelt and oat flour for this recipe but you can use any whole wheat flour you like. These pancakes are fluffy, spongy and delicious. The recipe is below ????

Whole Wheat Pancakes for Two
1/2 cup (62.5 grams) whole wheat flour (I used spelt)
1/2 cup (62.5 grams) oat flour (you can simply add oats to your blender and pulverize)*
1 teaspoon (4 grams) baking powder
3/4 teaspoon (3.5 grams) baking soda
1/4 teaspoon (1.5 grams) salt
3/4 cups (180 grams) sour cream or Greek yogurt
1 tablespoon (21 grams) raw honey
1 teaspoon (4 grams) vanilla
1 egg - lightly beaten
1 tablespoon butter (14 grams) — melted and cooled down
Milk of choice — you will use it to thin out the batter 1 tablespoon at a time
Place the flours, baking powder, baking soda and salt in a bowl and mix well.
Place the sour cream or yogurt, honey and vanilla in another bowl. Add the beaten egg and the butter. Mix well.
Add the flour to the wet ingredients and mix. The batter will be thick. Thin it out by adding 1 tablespoon of milk at a time until you have the desired consistency. I used three tablespoons.
Butter a pan or griddle and add a small ladle full of batter. Press it down to form a circle.
Cook until you start seeing bubbles and carefully flip. Flip a couple of times until the pancake is fully cooked through.
Serve with butter and maple syrup or honey.
