I filmed this a couple years ago but thought it time to post with the Holidays coming! ---This is way better than the darker fruitcakes - no citron in this- only Cherries, Pineapple and Pecans
Wedding cake recipe | birthday cake recipe | a fruit cake for special occasions!
This fruit cake recipe will make a great birthday cake recipe or wedding cake recipe. If you are looking for a fruit cake recipe for a special occasion, this will be great.
Ingredients (8 inch cake tin):
Plain flour: 350g
Mixed spice: 10g
Ground almonds: 110g
Eggs (medium): 6
Soft dark brown sugar: 250g
Butter: 250g
Dried mixed fruit: 1kg
Mixed peel (cut): 50g
Glace cherries: 125g
Lemon: 1
Orange: 1
Dark rum (optional): 250ml

If you want to make a special cake for that special occasion, such as a Birthday or Wedding, make it a few weeks in advance and add a touch more rum from time to time. The fruit cake will improve even more over several weeks.
A good dark rum has been used in this fruit cake recipe but you can of course use a good brandy.

White Fruitcake
Pre-heat oven to 325F or 160C.
1. In a bowl, combine 1/4 cup softened Magnolia Gold butter and 1/4 cup all purpose flour. Brush butter-flour mixture on bottom ad sides on 1
bundt pan or 9 inch round tube pan (loaf pans can also be used). Arrange 5 pieces each of red and green candied cherries at the bottom of the pan and 10 whole walnuts in between cherries.
2. Cake: Cream together 1 cup softened Magnolia Gold Butter or Baker's Best Margarine, 1 cup granulated sugar, 3 eggs, 1 tbsp baking powder, 1/4 cup orange juice, mix at high speed (or mix by hand). Turn mixer to low speed and add two 1/2 cups all purpose flour and 1/2 cup water. Lastly, add 1 1/2 (one and one half) cups mixed glazed fruits. Bake for 1 hour 30 minutes. Remove from pan after letting cake cool for 20 minutes.
* For dark fruitcake add 2 tbsp molasses.

Better Than Grandma’s Fruitcake
1 1/2 sticks butter, room temperature
1 1/4 cups light brown sugar
5 eggs, slightly beaten
1/3 cup applesauce
1 1/2 cups sifted all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon each of cloves, mace, cinnamon, and allspice
2 teaspoons vanilla extract
2 teaspoons orange extract
1 1/2 cups dates, chopped
1 1/2 cups dark raisins
1 cup candied cherries, chopped
1 cup dried pineapple, chopped
2 cups walnut pieces
2 cups pecan pieces
Preheat oven to 275°. Place a pan of hot water on bottom rack of oven.
Spray well a Bundt pan or 10” tube pan.
Cream butter and sugar; add eggs and applesauce.
Add sifted flour, baking powder, baking soda, salt, and spices.
Add both extracts.
Fold in fruit and nuts.
Bake approximately two hours and fifteen minutes until toothpick comes out clean.
Allow cake to cool on the counter fifteen minutes then remove from pan. Cool thoroughly, wrap, then store in refrigerator.
NOTE: Cake slices beautifully after it’s refrigerated.

BELIZEAN WHITE FRUIT CAKE
Ingredients:
8 oz candied fruit
1/2 cups golden raisins
1 cup chopped pecans
3 cups all-purpose flour, divided
2 cups butter, softened
2 cups sugar
6 large eggs, room temperature
Directions:
Preheat oven to 275°. Line bottoms of four greased 9x5-in. loaf pans with parchment; grease parchment.
In a small bowl, toss candied fruit, raisins and walnuts with 1/2 cup flour. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Gradually beat in remaining flour. Fold in fruit mixture.
Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pans 10 minutes before removing to wire racks to cool.
