Fudge Chocolate Brownies is made with dark chocolate, butter, all purpose flour, sugar, eggs, vanilla extract, baking soda, cocoa powder and oil. It has been topped up with a chocolate ganache made with chopped chocolate, all purpose cream and spread roasted nuts. The fudgy texture due to perfect oven timing and the balancing amounts of complementing ingredients make it a very popular baked-confection. FOR FUDGY BROWNIES
100g chopped chocolates
1/2 cup unsalted butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 teaspoon vanilla
2 large eggs
1/4 teaspoon salt
1/2 cup all purpose flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon baking soda
FOR GANACHE
1 cup chopped chocolates
1/2 cup all purpose cream (or heavy cream
Chopped peanuts for toppings
DIRECTIONS
In a bowl, start melting the chopped dark chocolate with the unsalted butter using a microwave or double-boiler. Stir until completely melted. Let it cool for a few minutes.
Once cooled down a little, add granulated sugar and brown sugar. Mix until combined. Then add eggs one at a time. Stir in between until all eggs are added and well-combined. Then add vanilla extract and salt. Mix well.
Using a clean finger, check if the sugar is completely dissolved. Once ready, sift the flour, baking soda, and cocoa powder. Make sure to sift properly to prevent lumping parts. Then give it a good mix once more.
Prepare an 8×8 baking pan greased with butter or oil. Line with parchment or baking paper for easier unmolding.
Then, gently pour the brownie mixture to the baking pan. Tap against the table to remove air bubbles.
Bake in a preheated oven at 180°C for 20-25 mins. Do the toothpick test to see if it’s ready. After that, let it cool and set.
FOR CHOCOLATE GANACHE
Combine chopped chocolates and heavy cream in a heat-proof bowl. Microwave for a minute until melted. Stir until completely melted and shiny. (you can also do a double-boiler method)
Pour the hot chocolate ganache onto the brownie. Top it with any kind of roasted nuts to suit your liking. Chill for at least 4 hours.
Finally, you can cut your fudgy chocolate brownie into small bite-sized cubes and set it in a small cupcake liner. Enjoy!

This is Sally's all time favourite brownie and it just happens to be Gluten Free. It's made using ground Almonds instead of flour which gives the Brownie the most amazingly fudgey gooey texture. You can add any chocolate chips or nuts to this brownie but we have gone for our faves - Caramelised White Chocolate (duh) and Macadamia Nuts which have a beautiful buttery flavour and texture. Our top tip with any brownie but specifically this one, is to chill it in the fridge overnight (or for a few hours) to help achieve the dream texture.

A blondie brownie or blondie bar is a rich, sweet dessert bar. It is made from flour, brown sugar, butter, eggs, baking powder, and vanilla, and may also contain walnuts or pecans. Chocolate blondies may contain white or dark chocolate . A blondie may have a taste reminiscent of butterscotch.
Ingredients:
Melted white Butter 35 g
White chocolate 200 g
Egg 1 ½ n
Castle sugar 45 g
Lemon rind ¼ ts
Vanilla essence ½ ts
Lemon juice 1 ts
Raisins 40 g
Almond 30 g
All purpose flour 200 g
Directions:
Take a bowl add white chocolate, melted white butter, mix it well.
Take another bowl add egg, castle sugar, lemon rind, raisins, almond, mix this and pour the chocolate mixture and mix it, add all purpose flour, mix this and pour into the paper lined baking tray and bake them at 180 c for 25 to 35 minutes, then cut them into pieces.

RECIPE
Ingredients:
1 can (14oz/397g) Sweetened condensed milk
3 tablespoons (45g) Butter, unsalted
450g White chocolate
1 teaspoon Vanilla extract
3oz (85g) toasted Pistachios
3oz (85g) dried cranberries
Pinch salt
Directions:
1. Grease and line an 9-inch (22cm) square baking pan with parchment paper.
2. In a medium-sized saucepan, add butter, white chocolate, sweetened condensed milk and salt. Place on a low heat, cook stirring frequently until completely melted and smooth. Continue to heat for 3-4 minutes until slightly thickens. Stir in pistachios and cranberries and vanilla extract.
3. Pour the mixture into the pan and evenly spread.
4. Refrigerate for at least 3-4 hours. Release from the pan, cut into squares.
Notes:
• Keep refrigerated
• You can use any kind of nuts

¾ cup salted butter - 1 ½ sticks; cubed
2 large eggs - room temperature
