4 lbs chicken (legs)
8-12 cups water
2 cups coconut milk
1 1/2 tablespoon olive oil
1 medium onion
4 sprigs thyme
6 cloves garlic
1 scotch bonnet pepper
2-3 tablespoon Caribbean Green Seasoning
5 med potatoes
3 med sweet potato
4-6 eddoes
1 lb taro (dasheen)
2 cups yellow split peas
1 large carrot
2 chicken stock cubes
3/4 teaspoon salt (for the chicken)
pinch salt - dumplings
1 teaspoon brown sugar
2 cups all-purpose flour
1/4-1/2 cup water (dumplings)
2 tablespoon parsley
