How To make Welsh Cakes
1 lb Self-raising flour
2 oz Butter
4 oz Sugar
4 oz Sultanas and raisins
2 Eggs
1/3 pt Water
On sale in every Welsh bakery, these are one of the great delights of teatime. The are easy to make. The Welsh use a flat iron "planc" (a griddle) to bake the cakes, which are cooked on top heat like Scotch pancakes. A heavy frying pan will do fine if you don't have a griddle. Makes 15-18 cakes. Rub the fat into the flour and add the fruit and sugar. Mix the water with the eggs and use to make a soft dough just a little firmer than that for the scones. Tip on to a well-floured board and roll out to a thickness of 1/2-inch. Cut out circles with a 2-1/2-inch shell-edged cutter.
Heat a planc or heavy iron frying pan - get the heat up into it gently and thoroughly, and do not let it overheat. If the pan is not well-seasoned or non-stick, slick it with a little butter or vegetable oil. Bake the cakes on the pan, turning them once, until well-risen and lightly browned. They will take about 5 minutes each side. Eat hot or cold, with or without salty butter, but always with a cup of piping-hot tea. Source: Philippa Davenport in "Country Living" (British), April 1989.

1 tsp ground mixed spice or all spice for baking (This can be optional, you can just use cinnamon)
3/4 tsp ground cinnamon
2 tbs milk
1 egg

1 cup - 250ml (8 fl oz)
3/4 cup- 180ml (6 fl oz)
2/3 cup - 150ml (5 fl oz)
1/2 cup - 120ml (4 fl oz)
1/3 cup - 75ml (2 1/2 fl oz)
1/4 cup - 60ml (2 fl oz)
1 tbsp - 15ml (1/2 fl oz)

extra butter, for greasing

One of our friends had the sweetest grandmother, and when we would visit there would always be Welsh cakes on the table with tea. She was kind enough to hand write this recipe for us, and it has become a favourite around our house. So follow along with the recipe video as we make Welsh cakes.
(or: picau ar y maen, pice bach, cacen gri, teisen radell, bakestones)
Ingredients:
2 cups all purpose four
4 oz butter
3/4 cup sugar
1/2 cup currants
1 or 2 eggs
milk if needed
1/4 tsp allspice
1/2 tsp baking powder
Method:
Rub fat and flour together until quite fine.
Add sugar, currants, spice and baking powder.
Add eggs and enough milk to make a soft dough.
Roll out on a floured surface, to a thickness of 1/8.
Cut into rounds.
Set electric frying pan to 350 degrees or if using a stovetop frying pan cook over medium.
Spread a bit of melted butter over the surface of the pan.
Place the cookie rounds into the pan.
Cook until the tops look like they are starting to dry out then flip the cookies and continue cooking until a light golden colour.
Remove from pan to cooling rack and sprinkle with white sugar or fruit sugar.
