1 tb VIRGIN OLIVE OIL
2 tb CHOPPED PARSLEY
BLEND TOGETHER ALL THE INGREDIENTS,WARM AND SERVE. ON CHICKEN SALAD,SEAFOOD SALAD,SPINACH SALAD,PASTA SALAD,OR PLAIN GRILLED OR POACHED MEATS,CHICKEN OR FISH.MAKES ABOUT A 1 1/4 CUPS.

POACHED SKATE WING WITH WARM TOMATO & CAPER VINAIGRETTE
KEEP IT FRESH: FRENCH SKATE WING
Our skate or ray is caught in the French waters and we normally use wings from either Blonde or Thornback rays as they give the best texture and flavour.

INGREDIENTS FOR 2 PEOPLE:
Skate Wings (Skinned & Trimmed) 800-1000 g
Salt 1 tbsp
For The Warm Vinaigrette:
Extra Virgin Olive Oil 5 tbsp
Red Wine Vinegar 1 tbsp
Red Onion (Finely Sliced) 2
Small Tomato (Skinned, Seeded & Diced) 2
Small Capers (Drained) 2 tsp
Flatleaf Parsley (Finely Chopped) 2 tbsp
Salt And Black Pepper to taste
BON APPETITE: Skate is a French fish restaurant favourite; it has a firm, tender flesh with a clear flavour and light off-white colour.
YOU'LL NEED:
Olive oil
Sea salt & black pepper
1 large shallow pan
PREP: To poach the skate, bring 1.5 litres of water to the boil in a large shallow pan. Add the salt, then lower in the skate wings. Reduce the heat and simmer the fish for 10 minutes, until cooked
COOK: Meanwhile, warm the olive oil, vinegar and red onion in a small pan.
After a few minutes, turn off the heat and add the tomato, capers and chopped parsley and season with salt and pepper.
SERVE: Serve the skate with the warm vinaigrette spooned over and some green beans on the side.
KEEP IT HEALTHY: Each delicious serving of skate wing contains over 21g
of protein. The extra virgin olive oil brings a good punch of vitamin E and vitamin K to the dish.
