How To make Vegetarian Sloppy Joes
1 tb Vegetable oil
1 md Onion; chopped
1 md Green pepper; chopped
3 c Cooked brown rice
32 oz Mexican-style pinto beans
-- (canned) 3/4 c Hickory smoke barbecue sauce
4 Whole grain buns
Heat oil in large skillet over medium-high heat. Add onions and green pepepr; cook 2 to 3 minutes. Add rice, beans and barbecue sauce. Simmer 10 to 15 minutes, until heated through. Serve on buns. Each serving provides: * 542 calories * 19.2 g. protein * 9.4 g. fat * 96.4 g. carbohydrates * 3.2 g. dietary fiber * 17 mg. cholesterol * 1637 mg. sodium. [Karen's note: I'm not sure where the cholesterol comes from in this recipe. You'll love this vegetarian version of sloppy joes with mushroom, peppers and onions. It's satisfying and healthy at the same time.
Recipe:
1 pound portabella mushroom caps
4 Garlic Cloves
1 tsp salt
1/2 tsp pepper
1 small onion
1/2 med red pepper
1/2 med green pepper
1 8oz can tomato sauce
3 tbs light brown sugar
1 tbs red wine vinegar
2 tbs Worcestershire sauce or Vegetarian Worcestershire Sauce
2 tbs tomato paste
1 tsp Fresh Thyme leaves
1/4 tsp red pepper flakes
Chop Mushrooms into small piece and add to a pot on med heat which is sprayed with cooking spray and let cook for 5-7min
Add Garlic, Onion, Peppers and season with salt and pepper, cook 5-7min.
Make sauce by adding Tomato Sauce, Brown Sugar, Vinegar and Worcestershire to a bowl and mixing together.
Add Tomato Paste to veggies and let cook 1-2 min.
Add sauce as let cook and thicken for 2 min.
Add Thyme and Red pepper flakes.
Serve on a bun with chopped pickles.

2 cups (350 g) white beans cooked
1 1/2 cups (360 g) tomato sauce (passata)
1 small bell pepper chopped
2 cloves garlic minced
1 medium-sized onion chopped
2 tbsp tomato paste
1 tbsp balsamic vinegar
1 tbsp soy sauce (gluten-free if needed)
1 tbsp vegan Worcestershire sauce (optional)
1/2 tbsp oil
2 tsp brown sugar or coconut sugar
1 tsp ground cumin
1 tsp onion powder
1/2 tsp smoked paprika
1/8 to 1/2 tsp cayenne pepper (or to taste)
1/2 tsp salt or to taste
black pepper to taste
4 soft burger buns (I used homemade gluten-free)

Vegan Sloppy Joes Two Ways! ???? Episode 97
oh yea Sloppy Joes done two ways was a success! If you swap out the 2 meats then make sure you change amounts of ingredients ie the crumbles were 14 or 16 ounces versus the lentils being 2 cups.
