How To make Vegetable Kurma
2 c Vegetables
2 Onions cut length-wise
2 Green-Chillies cut
Length-wise 1 ts Corriander powder
1 1/4 ts Salt
pn Turmeric powder 1/2 Inch Cinnamon
2 Cloves
2 Cardamom
2 tb Coconut powder
1 ts Khus-Khus (poppy seeds)
1/4 ts Garlic
1/4 ts Ginger
1. Put a reasonable sized vessel on the range and heat oil.
2. Put cinnamon, cloves and cardamom and fry for 2-3 minutes.
3. Add onions and green chillies and fry till onions turn brown.
4. Add garlic + ginger paste and fry for a minute or so.
5. Add vegetables and fry for about 3 minutes.
6. Add Water (about a cup or two).
7. Let the vegetables + turmeric powder cook.
8. If you are using canned or frozen vegetables skip the above step.
9. Add coconut paste, khus-khus, salt and wait till cooked. (note:

For Paste -
10-12 cashews soaked in water for 1 hr
2 tsp poppy seeds/khuskhus soaked in water for 1hr
1/4 cup grated fresh coconut
2tsp roasted chana dal
2 green chillies
2 green cardamom/hari elaichi
3-4 cloves/laung
1 piece cinnamon/dalchini
4-6 black peppercorns/kalimiri
1 tsp fennel seeds/sauf
1 tbsp coriander seeds/dhaniadana
1 tsp cumin seeds/jeera
2-2 dry red chillies
Curry-
3-4 tbsp oil
1 bay leaf/tajpatta
10-12 curry leaves
2 medium onion chopped fine
1 tbsp ginger garlic crushed/paste
2 tomatoes chopped
1/4 tsp turmeric powder
1/2 tsp red chilly powder
3 tsp fresh yogurt/dahi
Frest coriander
Salt to taste

Beans-12-15
Big Onion-1/2 of small
Curry leaves-1 string
Water-2cup
Salt-to taste
Coriander leaves-few
Curd-2tbsp
Cashewnuts-6
For the masala paste
Big onion-1/4 of 1
Ginger-small piece
Garlic-1clove
Green chilli-1-2
Curry leaves-5-6 leaves
Cloves-1
Cinnamon-1 small
Cardamom-1
Fennel Seeds-1/4tsp
Grated Coconut-4tbsp
Turmeric powder-1/2tsp
Coriander powder-1/4tsp
Method
Wash and peel vegetables..Cut into small pieces(potato,carrot,beans) ..(if u want u can include cauliflower ,green peas etc)
In a cooker add all these vegetable along with 1/2 of a big onion (sliced ) and water …
Cook until done..(one whistle is enough)
Let it cool down and open the cooker and set aside
Add all ingredients listed in masala paste into a blender and make a very fine paste ..
Add this paste to the cooked vegetable along with salt and allow to boil ..
Stir well until the boiling point .. Allow to thicken the gravy to a semi medium consistency ..
Garnish with coriander leaves ..
