~VEG NAVRATAN KORMA~
Prep time - 35mins
Cooking time - 45 mins
(Serves 4)
Ingredients -
FOR THE CURRY:
Oil or Ghee - ¼ cup
Black cardamom - 1 no
Cardamom - 6-7nos
Cloves - 5-6 nos
Mace (javitri) - 2 large blades
Star Anise (chakri phool) - 1 no
Cinnamon (1.5”) - 1no
Onion roughly diced - 3cups
Garlic roughly cut - 7-8cloves
Ginger roughly chopped - 2tbsp
Green chillies chopped - 2nos
Cashewnuts/Almond/Peanut - ¼ cup
Turmeric - 1 tsp
Kashmiri Chilli powder - 1tbsp
Coriander powder - 1 ½ tbsp
Cumin powder - 2tsp
Curd - 1 cup
Tomato roughly diced - 2cups
Salt - to taste
Kasoori Methi leaves - 2tsp
Water - 1 ½ lt
FOR VEGGIES:
Oil - a dash
Butter - 2tbsp
Shahi jeera - 1tsp
Garlic chopped - 1tsp
Ginger chopped - 1tsp
Green chilli chopped - 1tsp
Potato diced - ½ cup
Carrots diced - ½ cup
Beans cut small - ½ cup
Cauliflower florets - 1cup
Water chestnut (Singhara) diced - ½ cup
Salt - to taste
Turmeric - ½ tsp
Red chilli powder - ½ tsp
Cumin powder - ½ tsp
Coriander powder - 1tsp
Kasoori methi leaves - 1tsp
Water - 2cups
Paneer diced - ½ cup
Green peas (boiled) - ½ cup
Pista (roasted) - handful
Almonds (roasted) - a handful
Cream - ¼ cup
Sugar - 1tsp

NAVRATAN KORMA
Preparation time 10-15 minutes
Cooking time 25-30 minutes
Serve 2-4
Ingredients
For Navratan Korma
2 ½ tbsp Ghee, घी
½ tsp Cumin seeds, जीरा
2 medium Potatoes, cut into cube, आलू
2 medium Carrots, peeled, cut into diced, गाजर
Salt to taste, नमक स्वादअनुसार
1 no. Green chili (less spicy & broken into half) हरी मिर्च
1 ½ cups Cauliflower, medium size florets, फूलगोभी
1 inch Ginger, chopped, अदरक
1 no. Green chili (less spicy & broken into half) हरी मिर्च
¼ cup Green peas, हरी मटर
½ tsp Turmeric powder, हल्दी पाउडर
½ tsp Coriander powder, धनिया पाउडर
¼ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
Salt to taste, नमक स्वादअनुसार
1 cup Curd, beaten, दही
12-15 no. French beans, chopped, फ्रेंच बींस
½ cup Water, पानी
2 tbsp Cashew Paste, काजू का पेस्ट
Toasted nuts & paneer, भुने हुए मेवे और पनीर
For Toasted Nuts & Paneer
1 tsp Ghee, घी
1 ½ tsp Oil, तेल
200 gms Paneer, cut into medium cube, पनीर
6-7 Almonds, बादाम
6-7 Cashewnut, काजू
½ tsp Cumin seeds, जीरा
A pinch of asafoetida, हींग
¼ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tsp Dry fenugreek leaves, crushed, कसूरी मेथी
For Garnish
Pomegranate pearls, अनार के दाने
Coriander sprig, धनिया पत्ता
Process
For Navratan Korma
In a deep shallow handi, add ghee, once it's hot, add cumin seeds and let it splutter.
Add potatoes, carrots, salt to taste, green chili and saute for 2-4 minutes.
Add cauliflower, ginger, green chili, green peas and saute well on medium flame.
Add turmeric powder, coriander powder, degi red chili powder and salt to taste and saute it for 2-4 minutes until the masala is cooked well.
Add curd, french beans, water and let it cook for 4-5 minutes.
Add cashewnut paste and mix well.
Finish it with tossed nuts and paneer.
Transfer it to a serving dish and garnish it with pomegranate pearl, coriander sprig.
Serve hot with roti.
For Toasted Nuts & Paneer
In a pan, add ghee, oil, once it is hot, add paneer, almonds, cashewnut, cumin seeds, a pinch of asafoetida, degi red chili powder, dry fenugreek leaves and toss it well.
Keep it aside for further use.

Navratan Korma popular in maharashtrian weddings
Navratan Korma is a delicious combination of several vegetables in a creamy sauce. It can be served with any Indian bread. Navratan Korma, meaning a mixture of nine gems(nine fruits & vegetables) is a delicious vegetarian dish from the Mughlai cuisine. The nine gems indicate the nine veggies, fruits and nuts that go into the dish.
Ingredients:
2 number Black cardamom
2 tbsp Cashew nuts & Watermelon seeds paste
7-8 small Cinnamon sticks
6-7 number Clove sticks
1 springs Coriander leaves
1 tsp Coriander powder
1 tsp Cumin seeds
few springs Curry leaves
1 cup Fruits
1/2 tsp Garam masala powder
1 tbsp Ghee
1 tbsp Ginger garlic paste
1 number Green cardamom
1 tsp Green chillies, crushed
pinch Hing
2 cup Mixed Vegetables
2 tbsp Oil
1 large Onion paste
1 tsp Red chilli powder
Salt to taste
1 cup Tomato puree
1/2 tsp Turmeric powder
Water as needed
1 tbsp Yoghurt
Directions:
Heat 2 tbsp oil in pan, when it is hot enough at whole spices (2 black cardamom, 1 green cardamom, 6-7 cloves, 7-8 small pieces of cinnamon) and cumin seeds. Fry a bit and add curry leaves, onion paste (1 large) and stir well. Add salt and cook the onion paste till it is nicely cooked and golden in colour. Add 1 tbsp ginger garlic paste, 1 tsp chopped/ crushed green chillies and mix well. Add pinch of hing, turmeric powder, red chilli powder, coriander powder, garam masala and 1 cup tomato puree and mix all the ingredients well. Add 2 tbsp paste of cashew nuts and watermelon seeds, add little water, 1 tbsp yoghurt and cook this mixture till it oozes out oil. Cover with lid and cook for few mins. Add in the fried vegetables (capsicum, potatoes, paneer, cauliflower florets, peas and carrots) which were cooked till 95% done. Cover and cook for another 3-5 minutes. Add the fruits (apple, pineapple, grapes and pomegranate seeds) and mix well. Adjust the consistency by adding little water and bring it to one boil and the korma is ready. Top it with little ghee (optional). Sprinkle some coriander leaves and switch off the flame. Reach vahrehvah at -
