How To make Vegetable Bean & Noodle Casserole
1 1/2 c Onion,diced
1 1/2 c Celery,diced
3 tb Salad oil
1/3 c Flour,whole wheat
3 c Veggie broth
1 Potato,medium,peeled/grated
1/2 lb Mushrooms,fresh,sliced
1 Tomato,peeled/chopped
1/2 ts Rosemary
1/2 ts Thyme
1/2 ts Sage
1/2 ts Salt,seasoned
1/4 ts Pepper,seasoned
1/4 ts Mustard,dry
2 c Soy beans,cooked
3 c Noodles,whole wheat cooked
3 Tomatoes,medium-size,sliced
1/3 c Parsley,minced
1. Saute onion and celery in oil in a large Dutch oven until soft.~ 2. Stir
in flour; cook several minutes, stirring over medium heat.~ 3. Reduce heat; slowly add soy bean stock, stirring constantly.~ 4. Add carrots, potato, mushrooms, chopped tomato, herbs and seasonings; bring to boil to thicken, stirring constantly.~ 5. Remove from heat and set aside.~ 6. Alternate layers of soy beans and noodles in a greased 12x8x2-inch baking dish; pour some of the vegetable gravy over each layer. (Gravy should come almost to top of mixture.)~ 7. Arrange tomato slices over top; sprinkle with parsley.~ 8. Bake in preheated 350'F. oven 40 minutes.~

Simple Ground Beef, Bean & Pasta Casserole Recipe
Today I'm going to show you how I make a simple Beef, Bean and Pasta Casserole. This dish is super hearty, cheesy and delicious! So, grab your ingredients and cook along with me.

Ingredients you'll need:
• 1 - Lb Ground Beef
• 1 - Onion (Diced/Chopped)
• 2 - tsp Minced Garlic
• 1 - 15oz Can Cannellini Beans (Drained and Rinsed)
• 1 - 14.5oz Can Diced Tomatoes (Drained)
• 1 - 15oz Can Tomato Sauce
• 3 - Cups Uncooked Rigatoni Noodles (Prepare according to packaging instructions)
• 1 - 6oz Package Finely Shredded Parmesan Cheese
• 1 - 8oz Package Shredded Mozzarella Cheese
• 2 - tsp Italian Seasoning
• 1 - tsp Salt
• 1/2 - tsp Black Pepper
Instructions:
• Preheat oven to 350 degrees
• Spray 11x7 inch baking dish with nonstick spray - Set Aside
• Brown ground beef adding chopped onion & garlic (Drain access oil once cooked)
• Add beans, tomatoes, tomato sauce, Italian seasoning, salt & pepper - Cook 3-5 minutes
• Remove from heat - Stir in cooked pasta and parmesan cheese. Transfer to baking dish then sprinkle with mozzarella cheese
• Bake at 350 degrees until cheese is melted and bubbly
• Serve when ready

Green beans casserole recipe VEGAN VERSION
INGREDIENTS:
*200g green beans
*1 onion
*1 cup of flour
*1 tsp salt
*1 tsp pepper
*1 tsp paprika
*1/3 cup of olive oil
*150g mushrooms
*Pinch of salt and pepper for mushrooms
*1 cup of soy milk
* tsp fresh parsley
METHOD:
1. Cook green beans in salted water until soft
2. Slice the onion into strings and toss them into the mixture of flour, salt, pepper and paprika. Fry on olive oil until brown.
3. Remove half of the oil and add mushrooms to the pan, season it and stir fry for 5mins. Then add 1 tsp of that flour/salt-pepper-paprika mix and stir until flour is no longer visible. Then add 1 cup of milk and stir until it thickens. At the end add parsley and turn off the stove.
4. In a casserole dish put mushroom sauce in the bottom then beans and onions on top and cook at 230C for 30-40mins (don’t let the onions burn)
5. Serve with rice, mashed potatoes or some other food

Hurrell Family Tuna casserole Recipe:
8 tbsp unsalted butter
1 large onion medium dice
1/3 cup + 1 tbsp all-purpose flour
6 cups whole milk
4 oz sharp cheddar
12 oz salted canned tuna in olive oil
10 oz frozen peas
1 tsp kosher salt
1/2 tsp fresh ground black pepper
1 lb wide egg noodles of choice
Panko topping:
1 1/2 cups panko bread crumbs
3 1/2 tbsp unsalted melted butter
4 oz sharp cheddar cheese
1/4 tsp Maldon salt

Mexican Style Bean & Rice Casserole Recipe:
1 large yellow onion, diced
1 red bell pepper, seeded/diced
3 cloves garlic, minced
1 tbsp cumin seeds, toasted/ground
2 tsp ancho chile powder
2 medium zucchini, cut into 1⁄2 inch dice
2 cups cooked brown rice
1 (15 oz.) can black beans, drained/rinsed
2 cups corn, fresh or frozen
One recipe No-Cheese Sauce Recipe (below)
Chopped cilantro for garnish
No-Cheese Sauce Recipe:
1 large yellow onion, peeled, coarsely chopped
1 large red bell pepper, seeded, coarsely chopped
3 tbsp cashews, toasted (optional)
1 tbsp tahini (optional)
1 cup nutritional yeast
Salt to taste
