It's Aldi time y'all and this week there are some great Aldi Finds! It's their first Holiday Preview of 2023 and we get a glimpse of some of the pretty Christmas treasures they will be having this year! When we get home we make Slow Cooker Upside Down Frito Pie and it is DELICIOUS!
Slow Cooker Upside Down Frito Pie
Ingredients:
Ingredients
2 pounds ground beef
1 medium onion, chopped
2 envelopes chili seasoning mix
1 can (10 oz) diced tomatoes and green chiles, undrained NOTE: I used two cans and we loved how it turned out! ????????
1 can (15 oz) tomato sauce
1 can (15 oz) pinto beans, rinsed and drained
1 cup shredded cheddar cheese
3 cups corn chips
Toppings:
Sour Cream
green onions
peppers
Directions:
In a large skillet, cook beef and onion over medium heat until meat is no longer pink, 8-10 minutes, breaking it into crumbles; stir in chili seasoning. Transfer to slow cooker. Pour tomatoes and tomato sauce over ground beef mixture.
Cook, covered, on low 2-3 hours or until heated through. Stir beef mixture to combine. Top with beans. Sprinkle with cheese. Cook, covered, 5-10 minutes or until cheese is melted. Top with chips. Serve with toppings of your choice!

DEEP DISH PIZZA
Servings: 8
INGREDIENTS:
Dough
1¼ cup warm water
2¼ teaspoon active dry yeast
2 teaspoons sugar
3¼ cups flour
¾ cup cornmeal
2 teaspoons salt
2 tablespoons butter, melted
1 tablespoon olive oil
Sauce
2 tablespoons butter
1 onion, diced
1 teaspoon salt
1 teaspoon crushed red pepper
1 teaspoon oregano
2 cloves of garlic, chopped
1 teaspoon sugar
1 28-ounce can of crushed tomatoes with basil
10 slices mozzarella
½ pound Italian sausage
Fresh grated Parmesan
PREPARATION
1. For the pizza sauce, melt the butter in a small saucepan and add the onion, salt, red pepper flakes, and oregano, and sauté until golden brown.
2. Add the garlic, sugar, and crushed tomatoes, and simmer for roughly 20 minutes or until sauce thickens.
3. For the dough, combine the active dry yeast, sugar, and warm water together and let sit for one minute.
4. In a large mixing bowl, combine the flour, cornmeal, and salt.
5. Add the yeast mixture and butter into the dry ingredients and stir until dough forms.
6. Bring dough to floured surface and knead until dough forms into a ball.
7. Move dough to large bowl drizzled with olive oil. Coat dough in oil and cover and let rest for 1 hour.
8. Remove dough and bring onto floured surface.
9. Cut dough in half and begin working dough out ensuring that it is at least 2 inches wider than your deep dish pan. Double wrap the remaining dough with plastic wrap and place in a resealable freezer bag. Freeze for up to a month.
10. Preheat your oven to 425°F/215°C.
11. Bring your dough into your oiled and floured deep dish pan.
12. Using your hands press dough into sides of your dish making it as even as possible.
13. Lay slices of mozzarella across the dough, covering the entire bottom.
14. Add pieces of uncased Italian sausage on top of the mozzarella and top with tomato sauce.
15. Bake for 20-25 minutes or until crust starts to lightly brown and the cheese is melted.
16. Garnish with Parmesan.
17. Enjoy!

Upside-Down Red Cheesy Pizza

Ingredients
15 pepperoni slices
1/4 cup sliced jarred red peppers, drained
1 plum tomato, sliced into rounds
6 slices (6 ounces) sliced mozzarella
1 1/2 cups shredded Cheddar
6 slices provolone
1 cup marinara sauce
1 pound store-bought pizza dough
1/2 red bell pepper, sliced into thin rings
1/2 yellow pepper, sliced into thin rings
Fresh basil, for serving
Directions
Preheat the oven to 400 degrees F.
Heat a 12-inch, well-seasoned cast-iron skillet over a low heat. Lay the pepperoni slices on the bottom of the skillet. Top with the roasted peppers and tomato slices. Arrange the mozzarella over the veggies and pepperoni, then sprinkle with the Cheddar and lay on the provolone. Spoon the marinara sauce over the cheese and spread it around.
Press the dough out into a circle slightly larger than the skillet. Lay the dough on top of the sauce and carefully tuck the edges down the sides of the skillet. Place in the oven and cook until the crust is golden brown, about 25 minutes.
Remove from the oven and let sit for a few minutes. Very carefully, place a large plate or platter over the top of the skillet and invert the pizza onto the plate. Garnish with the red and yellow pepper rings and tear the basil leaves over the top.
