Slow Cooker Upside Down Frito Pie
Ingredients:
Ingredients
2 pounds ground beef
1 medium onion, chopped
2 envelopes chili seasoning mix
1 can (10 oz) diced tomatoes and green chiles, undrained NOTE: I used two cans and we loved how it turned out! ????????
1 can (15 oz) tomato sauce
1 can (15 oz) pinto beans, rinsed and drained
1 cup shredded cheddar cheese
3 cups corn chips
Toppings:
Sour Cream
green onions
peppers
Directions:
In a large skillet, cook beef and onion over medium heat until meat is no longer pink, 8-10 minutes, breaking it into crumbles; stir in chili seasoning. Transfer to slow cooker. Pour tomatoes and tomato sauce over ground beef mixture.
Cook, covered, on low 2-3 hours or until heated through. Stir beef mixture to combine. Top with beans. Sprinkle with cheese. Cook, covered, 5-10 minutes or until cheese is melted. Top with chips. Serve with toppings of your choice!

Cranberry Upside-Down Skillet Corncake | Emeril Lagasse
With its tangy cranberry topping and buttery cornmeal batter, this cake is perfect combination of goodness. After it comes out of the oven, a quick flip onto a serving platter, will have you wondering how a dessert this impressive could come together to quickly. Enjoy it warm or at room temperature with a dollop of whipped cream or a scoop of vanilla ice cream, or as the perfect accompaniment to a cup of afternoon tea.
CRANBERRY UPSIDE-DOWN SKILLET CORNCAKE
SERVES 8 TO 10
2 tablespoons butter
¾ pound fresh cranberries
1¾ cups granulated sugar
4 teaspoons lemon zest
¼ cup fresh lemon juice
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
6 tablespoons yellow cornmeal
2 large eggs, plus 1 large egg yolk
2/3 cup whole milk
½ cup olive oil
Preheat oven to 350° F. Set a 10-inch cast-iron skillet over medium heat and add butter. Once butter has melted, add cranberries, 1 cup sugar, 2 teaspoons lemon zest, and lemon juice. Cook, stirring, until the cranberries break down and have released most of their juice, about 5 minutes. Using a slotted spoon, remove cranberries from skillet; set aside. Continue to cook until cranberry juices bubble and thicken, about 2 minutes more. Return cranberries to skillet and using a spoon, create an even layer. Remove skillet from the heat and set aside to cool, 20 to 30 minutes.
Meanwhile, prepare cake batter. In a medium bowl, whisk together flour, baking powder and salt. Whisk in cornmeal. In a large bowl, using an electric mixer, beat eggs, egg yolk, milk, olive oil, and remaining 2 teaspoons lemon zest until frothy. Add remaining ¾ cup sugar and mix to combine. Add to flour mixture and mix just until the batter is smooth. Pour batter over cooled cranberries in skillet and transfer to oven. Bake until a toothpick inserted into the center of the cake comes out clean, about 30 minutes.
Remove skillet from oven and allow to cool on a wire rack for 20 minutes. Using a small offset spatula, carefully run it around the edges to loosen cake. Place a plate over the top of the skillet and, working quickly, invert and remove cake pan. Allow to cool slightly before serving. Cake may be served either warm or at room temperature.

Upside-Down Red Cheesy Pizza

Ingredients
15 pepperoni slices
1/4 cup sliced jarred red peppers, drained
1 plum tomato, sliced into rounds
6 slices (6 ounces) sliced mozzarella
1 1/2 cups shredded Cheddar
6 slices provolone
1 cup marinara sauce
1 pound store-bought pizza dough
1/2 red bell pepper, sliced into thin rings
1/2 yellow pepper, sliced into thin rings
Fresh basil, for serving
Directions
Preheat the oven to 400 degrees F.
Heat a 12-inch, well-seasoned cast-iron skillet over a low heat. Lay the pepperoni slices on the bottom of the skillet. Top with the roasted peppers and tomato slices. Arrange the mozzarella over the veggies and pepperoni, then sprinkle with the Cheddar and lay on the provolone. Spoon the marinara sauce over the cheese and spread it around.
Press the dough out into a circle slightly larger than the skillet. Lay the dough on top of the sauce and carefully tuck the edges down the sides of the skillet. Place in the oven and cook until the crust is golden brown, about 25 minutes.
Remove from the oven and let sit for a few minutes. Very carefully, place a large plate or platter over the top of the skillet and invert the pizza onto the plate. Garnish with the red and yellow pepper rings and tear the basil leaves over the top.

11/4 cups sugar, granulated
2 1/3 cups cake flour
1 TBSP baking powder
1/2 tsp salt, kosher
2/3 cup whole milk (room temperature)
