How To make Upside Down Chili Pie
2 teaspoons corn oil
1/2 teaspoon cumin
1/2 cup chopped onion
1 medium green bell pepper
chopped
1 1/2 cups chopped tomatoes
8 ounces kidney beans :
cooked and drained
1 teaspoon chili powder
3/4 cup yellow cornmeal
1/2 teaspoon salt
Preheat oven to 375 oF. Spray 8 inch square pan with nonstick cooking spray.
To prepare chili, place large nonstick skillet over medium-high heat 30 seconds . Add oil; heat 30 seconds more. Add cumin and cook, stirring constantly, jus t until fragrant, about 30 seconds (do not burn).
Stir in onion and green bell pepper; cook, stirring often, until tender, 4-5 mi nutes. Stir in tomatoes, beans and chili powder; cook 5 minutes. Spread mixt ure evenly into prepared pan and set aside. (May be done ahead up to this poin t.)
To prepare cornmeal topping, bring 2 cups water to a boil. Gradually add cornm eal in a thin stream, whisking constantly to prevent lumps. When all cornmeal is added, stir in salt; continue cooking, whisking constantly, until thickened to the consistency of mashed potatoes, about 3 minutes. Immediately spread mix ture evenly over chili in pan and bake until chili mixture bubbles, about 15 mi nutes.
serving (4" square) provides: 1/2 fat, 1 1/2 veg, 1 pro, 1 1/2 bread.

1 cup beef stock
1 cup vegetable stock
Shredded tasty cheddar cheese

Pie Base: (can use shortcrust pastry instead)
2 cups flour
2 tbs melted butter
2/3 cup of water
Puff pastry for pie tops
Egg wash

Pineapple upside down cake is such a rewarding cake to make because it requires no additional decoration after being baked. It's easy to make and when you flip the result is impressive. You can really amaze a crowd with such a beautiful and effortless decoration. This cake is incredibly delicious, buttery and soft. The pineapple merges with the butter and light brown sugar creating indulging caramel flavors with a fruity touch. Its a cake worth every bite.

Pineapple upside down cake recipe
9’’x 3’’ round baking pan
Baking time 350 F Degrees
Bake for 55min - 1hr 5min or until toothpick comes out clean.
For the cake
11/4 cups sugar, granulated
2 1/3 cups cake flour
1 TBSP baking powder
1/2 tsp salt, kosher
2/3 cup whole milk (room temperature)
3 ea eggs, large (room temperature)
1 TBSP vanilla extract

Sometimes it’s fun to try a different way to cook something you have cooked a million times. A new spin on a classic that will sure impress anyone you decide to cook this for! Lasagna that can be sliced like a pie! Yes please! By wrapping your lasagna in noodles you ensure all that gooey cheese stays where it belongs and every slice will be as good as the first!

Upside Down Pizza - Cowboy Approved!
2 pounds ground beef
1 large yellow onion, chopped
1 (15-ounce) can tomato sauce
1 tablespoon minced garlic
1 (1.5-ounce) package spaghetti sauce mix
1 to 1 1⁄2 cups sour cream
1 ½ - 2 cups shredded cheese
Sourdough Pizza Crust ( or1 (8-ounce) can crescent rolls, unrolled
3 tablespoons butter, melted
Grated or shredded Parmesan cheese for sprinkling
1. Grease a 9-x-13-inch casserole dish or 12-inch Dutch oven.
2. In a cast iron skillet, begin cooking the beef over medium heat. Season with Red River Ranch Original Seasoning or salt and pepper. When it begins to brown, add the onion and continue cooking until the meat has completely browned. Spoon out the excess grease.
3. Reduce the heat to medium-low and stir in the tomato sauce, garlic, and spaghetti sauce mix. Let the mixture simmer for about 5 minutes to combine the flavors, stirring occasionally.
4. Scrape the mixture into the casserole dish. Spoon the sour cream onto the meat and spread out evenly. Sprinkle on the shredded cheese.
5. Place the pizza dough or crescent rolls on top of the casserole. Brush with the melted butter and sprinkle with the Parmesan cheese.
6. If cooking indoors, bake at 350 degrees F for about 25 minutes, or until the crust is golden brown. Serve hot.

Sourdough Pizza Crust:
3 cups Sourdough Starter ( link above )
1⁄4 cup olive oil
2 tablespoons sugar
2 teaspoons garlic salt
2 teaspoons baking powder
2 to 2 1⁄2 cups all-purpose flour
Favorite toppings, such as cheese, pepperoni, or sausage
1. Preheat the oven to 375°F. Lightly butter a large baking sheet.
2. In a large bowl, whisk together the sourdough starter, olive oil, sugar, garlic salt, and baking powder.
3. Slowly stir in enough flour to form a soft dough. Turn the dough out onto a floured surface. Lightly work the dough with the flour until all the stickiness is gone.
4. Roll the dough out to about inch thick. Cut out to fit the Dutch oven or casserole dish.
