3 cups water 1-1/2 cups great northern beans 1-1/2 cups small kidney beans (chili beans) 1 or 2 large ripe tomatoes steamed swiss chard (red) bay leaf
soak bean overnight, drain. put beans, water, and bay leaf in pressure cooker. Cook for 10 minutes at high. Quick-release steam by putting cooker under cold water chop tomatoes and swiss chard and gently mix with beans
enjoy over rice, pasta, or by itself.
you can probably substitute spinach for the chard.

Mediterranean Lemony White Bean Salad

Ingredients
30 oz (850g) canned Cannelini or Great Northern beans
5 scallions, thinly sliced
1/4 of a red onion, finely chopped
1/2 c Kalamata olives, pitted and halved
4 oz (115g) feta cheese, crumbled
2 roasted red peppers, diced
1/4 cup fresh parsley leaves, finely chopped
1 teaspoon dried dill (optional)
salt, to taste
freshly cracked black pepper to taste
The Dressing:
1/4 cup extra virgin cold pressed olive oil
2 tablespoons white vinegar
2-3 tablespoons lemon juice or more
1 teaspoon mustard
1 garlic clove, grated
a pinch of salt
1/4 teaspoon black pepper
Instructions
Combine the dressing ingredients together in a bowl. Whisk together until emulsified and set aside.
Drain and rinse the beans and set aside in a strainer.
Add the beans with all of the remaining salad ingredients in a large bowl. Reserve the feta and olives for the end. Season with salt and pepper and toss. Pour the dressing on top and toss together.
Add the feta and olives and toss together. Taste and adjust the seasoning if needed.
Transfer the salad to a serving platter.

Chickpeas adds a nice texture to the beans and the generous splash of olive oil and lemon juice brings out all the great veggie flavors.
Ingredients
Boiled Double bean - 50 gms
Boiled Chickpeas - 50 gms
Onion - 1 chopped
Tomato - 1 chopped
Green Bell pepper - 1
A few Coriander leaves
A few Garlic cloves chopped
Pepper - 1/4 tsp
Extra Virgin Olive Oil - 2 tsp
Salt to taste
A juice of lemon
Method:
1. For salad dressing: Mix the juice of lemon with olive oil, garlic cloves, pepper and salt. Gently
mix it.
2. In a bowl, add the double beans, chickpeas, onions, tomatoes and capsicum .Mix well.
3. Add the salad dressing to the vegetables.
4. Add the coriander leaves.
5. Refrigerate for 10 minutes and serve.

• 3 (15-ounce) cans beans, drained and rinsed or use 4 ½ cups cooked beans
• 1/2 medium onion, finely chopped (about 3/4 cup)
• 1 medium cucumber, finely chopped (about 2 cups)
• 3 tablespoons drained capers
• 1/2 cup (60 grams) finely chopped fresh parsley, see notes
• 3/4 teaspoon dried oregano, see notes
FOR THE DRESSING
• 1/4 cup (60 ml) red wine vinegar
• 1/4 cup (60 ml) extra-virgin olive oil
• 1 teaspoon Dijon mustard
• 1 to 2 teaspoons honey or maple syrup, optional
• 3/4 teaspoon fine sea salt, plus more to taste
• 1/4 teaspoon fresh ground black pepper
