This perfect pancake recipe is so easy and ultimately rewarding! You ' ll love these tender melt in your mouth pancakes with a drizzle of honey or maple syrup!
Ingredients:
-Egg 1
-Sugar 2 tbs
-Salt a pinch
-Oil 2 tbs
-Milk 3/4 cup
-All-purpose flour 1 up
-Baking powder 1 tsp
-Vanilla powder 1 tsp
Directions:
-In a bowl add, egg, sugar, salt, oil, milk and mix well.
-Add all-purpose flour, baking powder, vanilla powder / vanilla essence and mix well.
-Grease the pan , pour 2 tbs of batter and cook on low flame until bubble formation stop, flip and cook for 1 minute.
-On serving plate, place pancakes, butter and drizzle some honey / maple syrup & serve! #ChasetheFlavors

Fluffy Coconut Pancakes with Mango Salsa | Jock Zonfrillo
For those people celebrating Shrove Tuesday, or just lovers of a good pancake, here’s my recipe for coconut pancakes with mango salsa. It’s fluffy and with mango, coconut and banana is seriously tropical. It's not too late - these pancakes can be for brekky, dessert, or a sneaky snack!

INGREDIENTS
Coconut Pancakes:
100g flour
60g coconut flour
20g jaggery
10g baking powder
5g salt
1 egg, lightly beaten
375g milk
50g unsalted butter, melted and cooled (plus more for frying)
150g banana, diced
120g moist coconut flakes
vanilla paste
butter or grapeseed oil, for greasing
Mango Salsa:
2 mangoes, diced
1 lime, zested and juiced
20g black sesame, toasted
20g dessicated coconut
2 oranges, segmented
1/2 bunch mint leaves, finely sliced
30g jaggery, grated
20g ginger, minced

METHOD
To make the mango salsa, combine lime juice, zest, sugar and ginger. Add the remaining ingredients and combine. Let stand while you make your pancakes to allow the flavours to merge.
For the pancakes, whisk together the flours, sugar, baking powder and salt in a large mixing bowl.
Combine the egg, milk, butter and vanilla and beat together with a fork. Add the banana and coconut, then fold this mixture into the dry mix, being sure not to overwork.
Grease a heavy black steel skillet or non-stick pan with desired fat. Heat over medium heat.
Portion pancake into 4 x 225 portions.
Once hot, add pancake mix and cook for 3 minutes or until the surface begins to bubble. Carefully flip and cook for an additional 3 minutes.
Serve with the mango salsa on top.
