ITALIAN WEDDING SOUP INGREDIENTS:
For the meatballs:
1 lb of Ground Chicken
1/3 cup of Breadcrumbs
1/3 cup of Grated Parm or Romano
2 Cloves of Garlic, minced
1/4 cup of Fresh Parsley, finely minced
1 Tbsp of Garlic and Herb Seasoning
1 Tbsp of Olive Oil
1 Egg
Salt and Pepper to taste
For the soup base:
2 Tbsp of Olive Oil
1 Yellow Onion, finely diced
4 Stalks of Celery, diced
4 Carrots, peeled and diced
12 cups of Chicken Stock
5oz of Fresh Baby Spinach, washed
Salt and Pepper to taste
Rind of some authentic parmigiano, optional
Freshly grated parm

Crock Pot Tortellini Soup!
1 pound mild Italian sausage, browned and drained
15 oz can diced tomatoes
32 oz chicken broth
8 oz cream cheese, cubed
20 oz frozen cheese tortellini
3-4 cups fresh spinach
In slow cooker, add browned Italian sausage, chicken broth,
tomatoes, and cubed cream cheese. Cook on low for 4 hours
or until cream cheese is melted. Stir in spinach and tortellini and
cook for an additional 30 mins or until pasta is to your liking.

CHICKEN ALFREDO TORTELLINI SOUP
2 tablespoons unsalted butter
1/2 medium yellow onion, diced
4 ounces baby carrots, halved lengthwise and sliced into half-moons
2 cloves garlic, minced
1 pound boneless skinless chicken breasts, cut into bite-size cubes
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup all-purpose flour
4 cups reduced-sodium chicken stock
1 cup half-and-half
1 teaspoon crushed red pepper flakes
9 ounces cheese tortellini, frozen or fresh
2 cups freshly shredded Parmesan cheese
2 ounces fresh baby spinach
INSTRUCTIONS:
Warm a large pot over medium-high heat. Once you can feel the heat when you hold your hand 6 inches above the pot, add the butter and let it melt. Add the onion and carrots. Cook the vegetables until the onions are translucent, about 3 minutes. Add the garlic and cook for 30 seconds.
Then add the chicken, salt and pepper. Stir to combine. Cook for 3 minutes, just to get a little color on the chicken, stirring occasionally. Don’t worry about the chicken being cooked through, because we are going to continue cooking it.
Sprinkle the flour over the chicken and veggies. Stir to coat everything and continue cooking for 2 to 3 minutes to cook out the floury taste. Stir in the chicken stock, half-and-half and red pepper flakes. Continue cooking until the soup thickens, 5 to 10 minutes.
Add the tortellini to the pot and cook until al dente (has a bite to it), 5 to 7 minutes (frozen takes longer). Remove the pot from the heat. Sprinkle a handful of cheese over the soup and stir. Once it has melted into the soup, add another handful. Slowly melting the cheese will give the soup a smooth consistency. Taste for seasoning and add salt and pepper as necessary. Pour into bowls and garnish with the spinach.
RYAN'S SNICKERDOODLES
1 cup shortening
1 cup sugar
2 1/2 cups flour
2 eggs
2 Tbsp sugar, 2 Tbsp cinnamon (mixed together)
Preheat oven to 400.
Cream together shortening, sugar, & eggs until fluffy.
Add flour & mix.
Roll into golf ball size cookies & roll in the cinnamon sugar mixture.
Place on ungreased baking sheet & bake 8-10 minutes.

Easy 5 Ingredient Fall Recipe - Tortellini Tomato Soup
Ingredients
- 1 lb sausage
- 2 cartons of tomato and red pepper soup
- 1 package Tortellini
- 1 onion
- Bag of spinach
Brown sausage, cook onion, and add to a pot with tomato soup. Stir in the tortellini and add a bag of spinach towards the end. Enjoy!

My Mom's Famous Tortellini Soup Recipe PERFECT for FALL
I absolutely love soup ???? I grew up with my mom making a variation of this exact recipe all the time. We’re having a friend over for dinner tonight, so it was the perfect excuse to start off soup season. Now that it’s fall, I’m excited to have this meal on repeat for the new few months. Pro Tip: it also makes the best leftovers!
Let’s get cooking!
Ingredients:
1 Chicken, uncooked in your desired size
1 Yellow Onion
1 Bundle Celery
1 Bundle Carrots
1 Red/Orange/Yellow Bell Pepper
2 Handfuls Spinach
2-4 tbs Dill
1 Tbs Italian seasoning
Salt
Pepper
1 Package Cheese Tortellini
Parmesan Cheese (to serve)
If not roasting your own chicken:
2 32oz packages of chicken broth
1 Rotisserie Chicken
Boil the chicken with half the onion, half the celery, half the carrots, and salt for 60-90 minutes. Take chicken out carefully and let cool. Take veggies and excess chicken fat out of the broth.
Once the chicken is cool, carefully take the meat off the chicken and set aside.
Dice the rest of the onion, celery and carrots and sauté them in a pan with some salt, pepper & butter/oil for 10-15 minutes. Bring broth back to a boil while you do this. Dice the bell pepper as well, but set it aside for now.
Add the veggies to the broth, then add chicken and tortellini. Check your tortellini for cook time.
Try the broth to determine if you need more salt, pepper, dill, or Italian seasoning.
The last two minutes of the tortellini cooking, add as much spinach as you’d like into the soup.
Add parmesan cheese when serving.
