Ingredients
2 small chicken breast cooked and seasoned
⅓ lb. Sweet Italian sausage cooked
2 c. Prepared cheese tortellini
½ c. Carrots chopped
1 white onion Diced
2 tbsp. Flour
¾ c. Celery sliced thin
6 tbsp. Butter unsalted
2 c. Vegetable broth
2 c. Chicken broth
½ c. Heavy whipping cream
½ tsp. Chicken bouillon
½ tbsp. Cali Love @spicetribe
½ tbsp. Porcini Paradiso @spicetribe
1 tbsp. Garlic of Eden @floraandmana
¼ tsp. Nutmeg
Kosher salt to taste
1 c baby spinach
In a Dutch oven set to medium heat, add your butter.
Once you're better melted, add in onions and cook until translucent, then add in celery and carrots.
Cook all three until soft and then add in your seasonings.
Add in your flour.
Mix your flour in and let cook down for 2 minutes.
Once your flower has cooked off, add your broth, chicken, bouillon, and cream
Cook everything together on medium heat. Until the broth has reduced by about ¼.
Add in your sausage, chicken, spinach and tortellini.
Cook your tortellini for 3 to 5 minutes. Until tinder and then serve your soup.
Add your favorite toppings and enjoy!

Happy fall y'all! Fall is definitely one of my favorite seasons. Although here in Miami we don't get that perfect crisp fall weather, I still love all the traditions of pumpkin carving, apple cider, scary movies and my fall FAVORITE recipes! Today I am whipping up Half Baked Harvests Creamy Tortellini Vegetable Soup! It is super easy and delicious, perfect for those crisp, cozy, fall days and nights! Ingredients-
1/4 cup extra virgin olive oil
1 yellow onion, chopped
2-4 cloves garlic, minced or grated
2 tablespoons fresh thyme leaves (or 2 teaspoons dried)
1 tablespoon dried basil
1 tablespoon dried oregano
1-2 teaspoons fennel seeds use to your taste
1 teaspoon smoked paprika
1 pinch crushed red pepper flakes
kosher salt and black pepper
2 tablespoons tomato paste
6 carrots, chopped
4 celery stalks, chopped
1/2 cup dry white wine, such as Pinot Grigio or Sauvignon Blanc
6 cups low sodium vegetable broth
4-6 cups roughly chopped kale
1/2 cup whole milk or heavy cream
1/3 cup grated parmesan cheese, plus more for serving
1 pound fresh cheese tortellini

Easy To Make Tortellini Soup For One - Ready in 30 Minutes!
Hearty tortellini soup ready in just 30 minutes! This outstanding single serving soup is loaded with Italian sausage, cheesy tortellini, and plenty of fresh vegetables.

???? INGREDIENTS
½ tablespoon olive oil
4 ounces Italian sausage
½ cup chopped onions
1 clove garlic , minced
⅛ teaspoon dried thyme
⅛ teaspoon salt
⅛ teaspoon ground black pepper
1 cup low sodium chicken broth
1 medium Roma tomato (about ½ cup chopped)
2 ounces refrigerated cheese tortellini (about ¾ cup)
½ cup fresh spinach , chopped
2 tablespoons heavy cream
Optional: Parmesan cheese for topping
???? INSTRUCTIONS
1) In a 2-quart saucepan over medium heat, heat the oil for 30 seconds. Add the Italian sausage and cook, stirring frequently until browned, about 5-7 minutes.
2) Add the chopped onions and cook for 2 minutes, stirring frequently until the onions have softened. Add the garlic, dried thyme, salt, and pepper and cook, stirring occasionally for 1 minute more.
3) Add the broth and chopped tomatoes and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
4) Stir in the tortellini and simmer for 3-5 minutes, until tender.
5) Stir in the chopped spinach and cream. Bring to a simmer and cook for 2 minutes, stirring occasionally.
6) Pour into a bowl and serve with fresh shredded Parmesan cheese, if desired.
???? Expert Tips
A) You can use arugula instead of spinach in this recipe or leave the spinach out altogether. If you love spinach, feel free to add more if you'd like.
B) Although I love using fresh thyme, I don't always have it on hand. If you happen to have access to fresh thyme, use a little less than ½ teaspoon instead.
C) I use fresh tortellini because it takes just minutes to cook. Fresh tortellini can be found in the refrigerated section of most supermarkets. You can also use frozen tortellini or dried tortellini instead. These types will take a little more time to cook so be sure to adjust your cooking time based on the package instructions.
D) Feel free to add more vegetables to your tortellini soup. Consider adding in a handful of fresh green beans, ¼ cup of rinsed and drained canned kidney beans, or chopped zucchini. If necessary, add a little extra broth too thin the soup.
E) The spiciness of the soup will mostly be determined by the spiciness of your Italian sausage. If you'd like a spicy tortellini soup, use hot Italian sausage. You may also like to add a pinch of red pepper flakes for a little heat. A pinch is roughly half of an ⅛ of a teaspoon. Add the red pepper flakes along with the garlic, dried thyme, salt, and pepper.
