INGREDIENTS
- 2 tbsp butter
- 2 ribs celery, diced
- 1 medium onion, diced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 28 oz diced tomatoes
- 14 oz tomato sauce
- 2 cups tomato juice
- 2 cups chicken stock
- 1 sprig fresh rosemary
- 1 sprig fresh oregano
- 10 oz cheese tortellini
- 1/2 cup heavy cream
- 1/4 cup chopped fresh basil
- 1/4 cup Parmesan cheese
INSTRUCTIONS
- In a 6-quart saucepan, melt the butter over medium-low heat. Once melted, add the celery, onion, salt, and black pepper. Sauté the onion and celery until soft and translucent, 6-8 minutes. Add the garlic and cook until fragrant, 30 seconds. Then add tomato paste. Stir the paste into the mixture and cook until the paste darkens and starts to caramelize, 4-6 minutes.
- After the paste has cooked, pour in the diced tomatoes, tomato sauce, tomato juice, chicken stock, rosemary, oregano, and tortellini. Bring to a boil, cover, and reduce to a simmer. Simmer until the tortellini has cooked, 15-20 minutes.
- Remove the soup from the heat and stir in the cream. Add chopped basil and grated Parmesan cheese.

▢ 2 tablespoons oil
▢ 1 medium onion (diced)
▢ 2 tablespoons tomato paste
▢ 3 cloves garlic (minced)
▢ 1 teaspoon dried basil
▢ 1 teaspoon dried oregano
▢ ½ teaspoon salt
▢ ⅛ teaspoon black pepper
▢ 1 pinch red pepper flakes (1/8-1/16 teaspoon)
▢ 2½ cups low sodium chicken broth
▢ 28 oz canned crushed tomatoes (798 ml)
▢ 350 grams cheese tortellini (fresh or frozen) about ¾ pound
▢ 1 teaspoon granulated sugar
▢ ¾ cup heavy cream
▢ 1 cup roughly chopped spinach
▢ 3 tablespoons freshly grated Parmesan cheese
Instructions
In a large soup pot or dutch oven, heat oil over medium-high heat.
Add onion and cook until softened.
Add tomato paste, garlic, basil, oregano, salt, pepper and pepper flakes. Cook and stir 1 minute.
Add chicken broth, tomatoes, tortellini and sugar. Stir to combine.
Cover and simmer over medium-low heat, stirring often, until tortellini is cooked through, about 3-5 minutes.
Stir in cream, spinach and Parmesan. Taste and adjust seasonings before serving.

Creamy Tortellini Soup (adapted from plainchicken.com)
1 lb. sweet italian sausage
1 onion, diced
32 oz. chicken broth
28 oz. can petite diced tomatoes with juices
2 cans tomato soup
8 oz. chive and onion cream cheese, softened
3 c. (loosely packed) fresh spinach leaves
20 oz. pkg. (family size) cheese tortellini
In a Dutch oven over medium high heat, brown the sausage with the onions until the sausage is cooked through and the onions have softened. Add the chicken broth and use a wooden spoon to stir and scrape any brown bits of sausage from the bottom of the pan. Add the diced tomatoes and tomato soup. Bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes. Stir in the cream cheese. Add the spinach and tortellini. Stir to combine. Cover and simmer for another 5-10 minutes. Serve with crusty bread, if desired. ENJOY!

2 tbsp olive oil
1 pound (450g) Italian sausage , casings removed
1 onion, chopped
6 garlic cloves , minced
1 carrot, diced
2 celery sticks, chopped
2 cans (28oz – 800g) crushed tomatoes
1/2 tsp dried thyme
1/2 tsp dried oregano
1 tsp dried basil
1 tsp (5g) salt
1/4 tsp (1g) black pepper
4 cups (1liter) vegetable stock
9 oz (250g) tortellini , filled with cheese, ham or spinach (your choice)
1 cup (240g) cream
2 cups (40g) fresh baby spinach
For Garlic Cheese Toasts
1 baguette
1 cup (100g) cheddar cheese , grated
dried oregano
