Stove Top Oxtail Recipe - I Heart Recipes

No fancy gadgets are needed for these Stove Top Oxtails, and it’s all made in one pot. This is the perfect comfort meal on a chilly night. It’s tender, savory, and layered with flavors. I’ll walk you through step by step how to make this simple and delicious southern meal your family will love.

0:15 - Trim the fat from the oxtails.
0:19 - Place the oxtails in a bowl.
0:20 - Drizzle with olive oil.
0:25 - Sprinkle with seasoning salt.
0:32 - Add black pepper.
0:36 - Sprinkle with my secret ingredient.
0:48 - Sprinkle with red pepper flakes.
0:51 - Toss the oxtails until well-coated.
1:08 - Place the oxtails in a heated pan.
1:22 - Brown the oxtails.
1:30 - Be sure to brown all sides.
1:32 - Add in sliced onion.
1:58 - Toss in fresh thyme.
2:02 - Drizzle in browning sauce.
2:09 - Coat well.
2:19 - Add in garlic cloves.
2:23 - Pour in beef broth.
2:37 - Sprinkle in parsley.
2:44 - Give it a quick stir.
2:48 - Turn the heat up to high.
2:54 - Add in carrots and bay leaves.
3:20 - So tender!

BAKING POWDER STOVETOP BISCUITS (recipe is not in our cookbooks)
2 CUPS ALL-PURPOSE FLOUR (WHITE LILY)
3 TSP. BAKING POWDER
1 TSP. SALT
1/3 CUP CRISCO SHORTENING OR ROOM TEMP. BUTTER
1 1/2 CUPS WHOLE BUTTERMILK
If flour is lumpy, add it to a hand sifter with salt and baking powder and sift into a medium bowl.
If flour isn’t lumpy, just add it to the bowl with baking powder and salt and mix well.
Blend Crisco, (or butter) and flour together with pastry blender, blending fork or with regular fork
until shortening is pea sized. Add buttermilk a little at a time until all flour is incorporated into dough. Dough shouldn’t be wet and sticky. (watch video tutorial to get an idea of what it should look like).
Note: Amount of buttermilk can vary depending on type you buy. Some are thin while others are thick. Place dough onto a floured surface. Sift flour on top then knead 5-7 times. Pat dough about 1/2 to 3/4 inch high. Cut out biscuits and place in a skillet. (instructions for type of skillet below)
YOUR SKILLET MUST HAVE A LID!
Iron Skillet- Grease cold skillet well with shortening before adding biscuits.
Non-stick skillet (preferred)- Do not grease, just add biscuits.
Put lid on biscuits, turn stovetop to med/low, wait for the lid to begin fogging up. Turn down to low.
Cook for 10 minutes and check to see if it is brown. Using tongs flip biscuits and cook another 10
minutes. Add butter to skillet. Rub each biscuit in butter and lay butter side up on serving plate. Enjoy!

What you need for this Pot Roast Recipe
BONELESS CHUCK ROAST
SEASONING RUB
How to Cook a Perfect Pot Roast on the Stove Top
Buy a roast with some fat in it. Marbling in the meat adds flavor and juiciness; the thinner and richer the marbling, the better.
For a stove top roast preparation, use a pot with a tight fitting lid and a heavy bottom.
Season the roast generously with salt, pepper, and whatever seasonings you like. A beef bouillon paste like my mama uses in the video is delicious.
Place the pot on the stove with just a few spoonfuls of water in the bottom and add the roast.
Lightly brown the roast on high heat for a few minutes.
Reduce the heat down to low, and cover the pot with a lid.
Check the roast periodically.
The beef will release it's flavors and cook in it's own juices.
Once the roast cooks out it's juices, it will begin to reduce.
About an hour into cooking, turn the roast.
Continue cooking until the roast cooks down to it's grease and drippings.
Remove the lid, raise the heat to medium, and brown the meat a final time in it's grease.
Remove meat from the pot.
Want Gravy?
To make beef gravy from the drippings, add a bit of flour and mix well over medium heat. Stir for about
1 minute until the flour and fat are well incorporated and the flour gets a bit of color. Raise the temperature and stir in broth or water and continue
stirring until the mixture begins to boil and thicken, and extra salt and seasoning as desired and pour into a gravy bowl.
