8 ea Slices fr or italian bread
2 ea Garlic cloves, halved
1 t Olive oil
2 T Onion, minced
1 ea Tomato, diced
1 pn Oregano,dried
1 pn Ground pepper
2 t Parmesan cheese, optional
Toast bread. Rub one side of hot toast with cut side of garlic. Heat oil in nonstick skillet over medium-high heat; add onion and cook, stirring until tender. Add tomato, oregano and pepper, stir. Spoon tomato mixture over garlic side of hot toast and serve immediately. Alternatively, sprinkle with Parmesan and broil for 1 minute. Per serving (2 slices): 105 cal; 2 g fat; 1 mg cholesterol; 190 mg salt.

Say hello to the easiest (and tastiest!) way to make use of an overabundance of cherry tomatoes found in your garden or at your local farmstand. One of our favorite ways to cook tomatoes, roasting does the best job at concentrating the sweetness and making the fruit jammy and rich. As far as hitting the right spot in the oven, keep in mind that you don’t want the tomatoes to break down completely in the oven; they should still hold their shape and show only small touches of smoky char.
INGREDIENTS:
• 1 ½ pounds cherry tomatoes (about 4 cups)
• 6 medium garlic cloves
• 5 thyme sprigs
• 1 teaspoon fennel seeds
• 1 teaspoon kosher salt
• 1 tablespoon sherry vinegar
• ¾ cup extra-virgin olive oil, divided
• ½ (8-oz.) baguette, sliced diagonally (about 8 slices)
• 4 ounces goat cheese log, softened
• Small fresh basil leaves

Grilled Cheese & Roasted Tomato Soup
Good soup ????
Fix those late night cravings with some bomb as grilled cheese and spicy tomato soup ???????? here’s my recipe:
6 tomatoes, quartered
1 onion, quartered
1 capsium/ bell pepper, chopped
1 whole garlic bulb
Chilli flakes (optional)
1/2-1 cup unsalted vegetable stock
1/2-1 cup cream
3-4 basil leaves
Salt and pepper
2 slices of your favourite bread
Mozzarella cheese
Cheddar cheese
Butter
Method:
1. Chop off the top of your garlic bulb, leaving the cloves exposed. With your garlic, place all your other chopped vegetables into a large baking dish, drizzle generously with olive oil, chilli flakes, salt and pepper and bake at 200C for 50-60 mins until the vegetables are slightly charred and soft.
2. [optional] Use a blow torch and lightly torch your roasted vegetable to add extra char if you like your soup smokey. Careful not to burn it.
3. Transfer your vegetables into a pot or a blender with your stock, cream and basil. With a stick blender or a normal blender, blend your soup until smooth. Salt and pepper to taste.
4. For your grilled cheese, cut up 2 slices of bread. You can use any cheese you want or have on hand. I used mozzarella for the stretch and cheddar for the bitey taste. Butter your bread and grate as much cheese as your heart can take. Grill in a pan over medium heat until golden brown and cheese melted. Serve with tomato soup.
