How To make Tomato Basil Bread
2 1/4 teaspoons dry yeast 3 cups bread flour 3 tablespoons wheat bran 1/3 cup quinoa grain (I didn't have this so I just substituted more flour) 3 tablespoons nonfat dry milk powder 1 tablespoon dried basil 1/3 cup chopped sun-dried tomatoes (see below)* 1 teaspoon salt 1 1/4 cups water
*Pour boiling water over sun-dried tomato halves. Soak 10 minutes, drain, and cool to room tenperature. With a scissors. snip into 1/4 inch pieces. Do not use tomatoes that are reconstituted and packed in oil for this recipe.
Add all the ingredients in the order suggested by your bread machine manual and process on the basic bread cycle according to the manufacturers directions. Or knead by hand (or by machine), let rise in bowl lightly sprayed with veg. spray, punch down, let rise in loaf pans (lightly sprayed with veg. spray) , and then bake till browned and done in a 350 oven (approxinaely 20-25 minutes.)

Ingredients
1 (8 oz) ball fresh mozzarella
1 (8,5 oz) jar sun-dried tomatoes in oil
1 basil bouquet or a whole tube of basil paste (4 oz)
1 cup + 1/3 cup flour
1 Tbsp baking powder
Salt and pepper to taste
1/2 cup olive oil
1/2 cup milk
3 eggs
Instructions
1 - Preheat oven to 375°F.
2 - Drain the sun-dried tomatoes and cut them into smaller pieces.
3 - Roughly cut the mozzarella in pieces.
4 - Rinse and chop the basil.
5 - Sift the flour over the bowl of a stand mixer. Add the baking powder, salt, and pepper.
6 - Add the oil and milk. Beat until smooth.
7 - Add the eggs one by one beating well between each addition.
8 - Add the sun-dried tomatoes, mozzarella, and basil (or basil paste). Beat well until combined.
9 - Pour batter into a greased and floured loaf pan.
10 - Bake for about 30 to 40 minutes.

Vegan Tomato Basil Bread (no yeast)
Flavorful, yeast free, dairy free, Tomato-Basil Bread with almost no kneading required.
Ingredients:
(makes 1 loaf)
Bread flour (or all purpose flour) 4 cups
Baking powder 2 Tbsp
Sugar 1 Tbsp
Salt 1.5 tsp
Red chili flakes 1 tsp
Garlic powder 1 tsp
Ground black pepper 1/2 tsp
Fresh basil leaves 1 cup
Sun-dried tomatoes (packed in olive oil) 1 cup
Warm water 1 and 3/4 cups
Apple cider vinegar 2 Tbsp
Olive oil 2 Tbsp
Directions:
Add 4 cups of bread flour to a large enough bowl.
To it add all the dry ingredients and whisk in to incorporate nicely.
Finely chop sun-dried tomatoes and basil leaves and add them to the flour.
Also add apple cider vinegar and olive oil.
Start preparing the dough by adding and incorporating a little water at a time (I feel hands are the most effective tool for this job :)
Prepare a sticky and shaggy dough. I used 1 and 3/4 cups of warm water but depending on the quality of flour, this recipe can use up to 2 cups of water.
Grease a bowl with olive oil and place the prepared dough in it. Roll it to coat with oil on all sides.
Cover and place it in a draft free place for 2 hours (it may require a little longer in cooler temperatures).
Line a 9 inch x 5 inch loaf pan with parchment paper.
Sprinkle some flour on the work surface and transfer the dough to it.
With a rolling pin, roll the dough as wide as the loaf pan (9). Then start rolling it in to a log. Tuck in the sides and place it in the parchment lined loaf pan. Cover and set aside till the oven preheats.
Start preheating the oven to 400 degrees Fahrenheit.
When the oven is ready, place the loaf pan on the middle rack and bake for 40 minutes.
After the oven turns off, do not open the door. Let the bread sit in the oven for another 10 minutes. Then pull it out.
Transfer the bread to a wire rack and allow it to COOL COMPLETELY before slicing to your desired thickness.
Enjoy toasted or un-toasted with your choice of spread!

Tomato Basil Bread--Panera Copycat Recipe
I am cutting out most of the processed foods my family has been eating for years and now I am making foods homemade and with love.
1 1/4 cup warm water
2. 1/4 teaspoons yeast
1 teaspoon sugar
**proof yeast for 5-10 minutes
1/4 cup oil
1 teaspoon salt
1/4 teaspoon garlic powder
1 1/2 teaspoons dried basil
3 teaspoons tomato powder or tomato paste
1/4 cup diced fine, sun dried tomatoes packed in oil
**mix in with yeast mixture
4 - 4. 1/2 cups bread flour
**add 3 cups of flour at first and then add more 1 tablespoon at a time until the desired dough consistency is reached.
**Knead 8-10 minutes, then let rest and rise for 45-60 minutes covered
**spread dough out and shape into a loaf-place in a greased loaf pan and let rise until it is 1 inch above the rim of the bread pan. (I used an 8x4 inch bread pan)
Bake at 400ºF for 30 minutes
TOPPING: while bread is baking make the sweet topping for the bread.
1 Tbsp each: brown sugar, white sugar and oil
1 1/2 tsp. each: flour, and honey
1/2 tsp cinnamon
1/8 tsp salt
**mix the topping and make a paste
After the bread has baked 30 min. add paste to the top of the loaf and return to the oven for 1-3 minutes. The topping should be just melted - if you leave it in the oven too long it will be very sticky, but delicious.
Panera uses this bread for their Veggie Mediterranean Sandwich. My husband enjoyed his BLT on this bread.
