Ingredients:
50 gms Castor Sugar
100 gms Butter
180 gms Refined Flour
1 tbsp Semolina (Optional)
20 gms Cocoa Powder
50 gms Grated Milk Chocolate
4 tbsp Milk
50 gms Melted Milk Chocolate
Method:
- Mix soft butter to refined flour in a bowl and convert it's texture like that of bread crumbs.
- Add caster sugar to this and mix well.
- Add semolina and mix it again.
- Add cocoa powder along with chopped milk chocolate in to the mixture and mix well.
- Add milk to this and bind it in to a hard dough.
- Roll the dough in to long cylinder and cut them in equal size.
- Roll the balls smoothly and punch them in the center with the help of your thumb.
- In a preheated oven, bake these cookies at 200 degree for 12 to 15 minutes.
- Once the cookies are baked, fill in the cavity with melted milk chocolate.
- Allow them to cool down in room temperature and indulge in the goodness!

2 ways Thumbprint Cookies recipe. Jam and pastel Thumbprint Cookies.
*This recipe makes about 48 Thumbprint cookies
(1/2 tbsp dough for each cookie)

Ingredients :
For the cookie dough :
200g (1/2 cup + 6 tbsp) salted butter (soften)
64g (1/2 cup) icing sugar
1 egg yolk (optional)
1 tsp (5ml/5g) vanilla essence
250g (2 cups) all purpose flour
43g (1/3 cup) corn flour
For the filling:
a) Jam Thumbprint Cookies
125g jam (any flavour)
b) Pastel Thumbprint Cookies
125g white chocolate
Any food colouring

Method:
For the cookie dough :
1. Add the butter and icing sugar to a bowl. Soften the mixture.
2. Add a egg yolk and vanilla essence to the mixture.
3. Sift all purpose flour and corn flour to the mixture.
4. Mix well till combined.
5. Shape the dough into a ball (1/2 tbsp each dough)
6. Use your thumb to make a well on the dough (not too deep)
For:
a) Jam Thumbprint Cookies
1. Add any jam filling to the cookie.
2. Bake the cookie at 140°C for 10-12 minutes
3. Done.
b) Pastel Thumbprint Cookies
1. Bake the empty Thumbprint cookie dough at 140°C for 10-12 minutes.
2. Melt the white chocolate
3. Divide the melted chocolate and add any food colouring.
4. Fill the baked Thumbprint Cookies with the coloured melted chocolate.
5. Let the chocolate set.
6. Done.

THUMBPRINT COOKIES
Preheat oven to 350 degrees F.
2 cups all-purpose flour
1 cup butter, softened
2 eggs
1/2 cup packed brown sugar
pinch of salt
2 1/2 cup pecan, walnuts, or peanuts, finely chopped
1. Separate eggs; add egg whites into bowl and egg yokes in another bowl. Beat egg whites with fork until frothy. Set aside.
2. Add softened butter, brown sugar and salt to egg yoke. With hand mixer beat until creamy. Add all-purpose flour. Mix until blended. Cover with plastic wrap and chill for 1 hour.
3. Roll cookie dough into 1-inch balls, roll in egg white, then roll in finely chopped nuts. Place on baking sheet. Using the back of a 1/2 teaspoon measuring spoon or by using your thumb make an indentation in the center of each cookie.
4 Bake for 8 minutes. Remove cookies from oven and add 1/2 teaspoon or preserves on top of each cookie.
5. Return cookies back to oven and bake an additional 8-10 minutes. Cool completely before serving.

Thumbprint Cookies | Preppy Kitchen
Thumbprint cookies are the original no stress ready in a snap cookie. The bright colored jam filling reminds me of Autumn leaves and Christmas ornaments. I made these with a drizzle glaze but you can use chocolate, nuts or coconut flakes just as easily. Let me know which one you prefer!
I love that these cookies can be made with little ones, as long as they have extra clean hands! Some people will use a teaspoon to press the indent into the cookie but I think it's called a thumbprint cookie for a reason. The recipe for the sugar cookie base is super versatile by the way, also great for cut out cookies!
