Stuffed Three Cheese Chicken
Chef Frank shows you how to make delicious three cheese chicken with a homemade red sauce.
INGREDIENTS....2 portions
2 medium chicken breast
1/3 c chopped yellow onion
1/3 c chopped celery
1/3 chopped carrot
2 tsp salt (used twice)
1 tsp black pepper
3 15.5 oz can of peeled Roma tomato (any tomato will do, Roma is best.
1 c all purpose flour
2 TBSP fresh mozzarella
2 TBSP goat cheese
1/4 c + 2 TBSP extra virgin olive oil
1/4 c torn basil leaves
Red Sauce
1. Combine celery, carrots, onion and olive oil in food processor or blender and purée.
2. Purée tomato
3. Cook the Sofrito on med low heat for 15 minutes.
4. Add tomato purée and add 1 tsp salt and 1/2 tsp black pepper.
5. Cover and simmer for 60-90 minutes. Stir regularly.
6. Simmer uncovered for another 30 minutes.
7. Remove from heat and add basil.
Chicken
1. Trim, clean and butterfly the chicken breast.
2. Combine flour with1tsp salt and 1/2 tsp black pepper.
3. Coat chicken thoroughly with flour mixture.
4. Heat 2 TBSP olive and and 1 TBSP butter in sautéed pan.
5. Sautéed chicken until done about 3 minutes per side.
6. Put a layer of tomato on the bottom of a casserole dish.
7. Put chicken on top of sauce and then fill with mozzarella and goat cheese.
8. Bake 5 minutes in 350 oven for 5 minutes or until cheese melts.
9. Top of with more sauce and Parmigiano-Reggiano.

Creamy Sundried Tomato Pesto & Chicken Pasta
This rosé pasta (pink sauce pasta) recipe is one of my favorite pasta dishes. A great combination of pasta with tomato sauce and pasta with creamy sauce. That makes the best creamy tomato pasta dish. This pasta dish is made with fresh cherry tomatoes, cream, parmesan cheese and more amazing flavors.
Recipe:
300g chicken, cubed
Marinate with seasoning of choice. I used garlic salt, black pepper and Portuguese seasoning @weberbraaisa
200g pasta, cooked (reserve ½ cup pasta water)
3 tbsp, sun-dried tomato pesto, pasta sauce @woolworths_sa
300ml fresh cream
2 tbsp chopped onion
1 tbsp butter
2 tbsp olive oil
2 cloves of garlic, crushed
1 red chilli, chopped
½ tsp garlic salt to season the sauce (or to taste)
3 -4 tbsp grated cheese, I used cheddar
To a pan on medium high- heat, add the oil, butter and onion – once the onion softens add the chicken and allow to fry (remember not to overcook them and don’t overcrowd the pan).
Add the garlic and chilli and fry for 30 seconds.
Next stir in 2 tbsp. of the pasta sauce, followed by the fresh cream, cooked pasta and pasta water. Allow the sauce to simmer then add the cheese and the remaining pasta sauce.
Optional: top with parsley and chilli flakes

1 cup panko breadcrumbs
1/2 cup finely grated parmesan cheese

2 eggs, lightly whisked
1/2 cup plain flour
Cooking oil
1 cup cheese
Finely chopped parsley,
Salt
For Tomato Miso sauce :
1 tbsp cooking oil
3 garlic cloves, finely chopped
1 tbsp tomato paste
1 tin 400g whole peeled tomato
1 tbsp miso paste
2 tbsp light soy sauce
2 star anise

Chicken Breast with Tomato Sauce and Capers
*Ingredients*
aromatic herbs, capers, chicken breast, flour, garlic, meat, onion, pepper, red bell pepper, salt, tomato sauce, vegetable oil, white wine
*Recipe*
Slice the chicken breast in halves and season it with salt and pepper. Coat it with flour.
Heat a skillet, add vegetable oil and begin cooking the chicken. Fry it for about 6-7 minutes per side.
Remove the chicken from the pan, and in the remaining fat, add the onion, garlic, and bell pepper. Stir, and when the onion becomes translucent, pour the diced tomatoes, white wine, and season with mixed herbs.
Add the capers and the previously cooked chicken. Leave on heat for about 2-3 minutes.
Serve warm!
