I have made an oyster sauce Lo Mein not so long ago. Even though it was a basic flavor, I got so many compliments. Everybody loves it. Today, we gonna upgrade it into a beef Lo Mein recipe. It is also easy and tasty. The beef is so tender and velvety. The noodles are flavorful. It got lots of umami taste from the oyster sauce. You can also use chicken, pork, shrimp instead of beef and create your own variations of lo mein.
INGREDIENTS (serves 2)
- 2 portions of noodles (I used fresh egg noodles, about 300 g / 10.6 oz)
- 1.5 tbsp soy sauce (Amazon Link -

- 3 tbsp of peanut oil (Amazon Link -
- 300 grams (10.6 oz) of beef
- 1/4 tsp of salt
- 1/8 tsp of baking soda
- 2 tbsp of cooking wine (Amazon Link -
- 1/2 tbsp of soy sauce (Amazon Link -
- 1/2 tbsp of cornstarch
- Black pepper to taste
- 1 medium-size onion, sliced thinly
- 3 pieces of scallion, cut into 2 inches long pieces
INSTRUCTIONS
- Slice 300 grams of beef into 1/8 of inches thick pieces. You can use beef chuck, flank, ribeye, sirloin steak.
- Marinade it with 1/4 tsp of salt, 1/8 tsp of baking soda, 1/2 tbsp of soy sauce, 2 tbsp Chinese cooking wine, 1/2 tbsp of cornstarch, some freshly ground black pepper to taste. Mix well and let it sit for 20 minutes.
- Bring a pot of water to a boil. Cook 2 portions of fresh egg noodles for 2-3 minutes. If you are using a different type of noodles, you have to follow the cooking instruction on the package.
- While waiting for the noodles, you should have enough time to cook the beef.
- I got many people asking me - why is my food sticking to my carbon steel wok? Well, you need to learn how to control the wok heat correctly.
- First, turn the heat to maximum and heat the wok until it is smoking hot. Then add some oil. Be generous with oil amount for this recipe because you want enough oil to coat the noodles so they don’t stick together while serving.
- Give it a toss so the oil will create a slight non-stick surface on the bottom. Wait for the oil to be smoking again. That means the wok is hot enough for you to add the marinade beef. Stir and cook. This way, the meat will not stick to the wok at all. That is how you control the wok heat correctly. We call it 掌握火候in Chinese.
- When the beef is halfway cooked, you should still be able to see some pink color here and there. Add a bunch of sliced onion. Stir for another 15 seconds.
- By now, the noodles should be ready. Quickly take them out. Shake off the excess water. Throw a bunch of scallion into the wok along with the cooked noodles. Turn off the heat. It is important, I will explain why later.
- Add 1.5 tbsp of soy sauce, 3 tbsp of oyster sauce, and 1.5 tsp of dark soy sauce. I will suggest you use a better quality oyster sauce since it is the key flavor. Mix until the seasoning is well combined.
- I turned off the heat right before I add the noodles is because we are making Lo Mein, all you need to do is to stir and mix. If you keep the heat on, then, you are making Chao Mein, which means stir fry noodles. That’s the difference between lo mein and Chao Mein.
- Give it a taste to adjust the flavor before serving because every brand of oyster sauce and soy sauce have a different level of sodium. You can add some toasted sesame oil at the end if you like. I don’t because I used peanut oil when cooking the beef.

INGREDIENTS:
1/2 lb thinly sliced beef (I used flank steak)
2 tbsp dark soy sauce, divided
1 tsp cornstarch
4 tbsp neutral oil, divided (I used avocado oil)
2 tbsp low sodium soy sauce
2 tsp fish sauce
2 tbsp oyster sauce
1 tsp sugar
2 cloves garlic, minced
1 bunch or 5 stalks of chopped Chinese broccoli
2 eggs
1 lb fresh wide rice noodles
DIRECTIONS:
1.) In a bowl, combine thinly sliced beef, dark soy sauce, cornstarch, and 1 tbsp of oil. Mix well and set aside.
2.) In another bowl, combine light soy sauce, 1 tbsp dark soy sauce, fish sauce, oyster sauce, and sugar. Stir until sugar dissolves and set aside.
3.) On medium-high heat, add 1 tbsp of oil to a large pan or wok. Once the oil is hot, add the beef and stir fry for 5 min. Once it's done, transfer beef to a bowl.
4.) Wipe the pan clean and add 1 tbsp of oil. Throw in the minced garlic and Chinese broccoli. Stir fry for 1 min. Push the broccoli to one side of the pan. Add 2 eggs and scramble. Incorporate the eggs with the broccoli, then transfer to a bowl.
5.) Turn the heat to medium and add the remaining oil. Throw in the rice noodles. Pour in the soy sauce mixture and stir fry for 2-3 minutes. The noodles will start to get soft and loosen up.
6.) Toss in the Chinese broccoli, eggs, and cooked beef. Keep mixing until ingredients are combined.
7.) Enjoy!

Thai beef noodle soup/braised beef noodles soup, fresh rice noodle
Today we're making delicious Thai street food. Thai beef noodle soup we called Kuay Tiaw Nuea Tun in Thailand. I will serve you my recipe with fresh wide rice noodle. We also add some seasoning such as fish sauce, sugar, chili flakes and vinegar ( if you like ) but today I won't add all of those seasoning, just add some of them but it's still taste good.

Ingredients
Wide rice noodles ( How to make wide rice noodle and Thai Lad Na )
1.5 lb beef chunk roast
2 pieces amomum costatum
1 tsp black peppercorn
4-5 cloves garlic
3 bay leaves
10 cloves
1 tsp coriander seeds
2 cinnamon sticks
4 pieces Chinese anise
2 pieces coriander root
4-5 dried Shiitake mushroom
2 tbsp rock sugar
3 chunks of palm sugar
2 slices galangal
3 tbsp soy sauce
3 tbsp oyster sauce
1 tbsp salt
Black soy sauce
Instructions
* You need some of beef chuck roast or you can use any kind of beef you like. I got this from a store so I already washed it and dried with paper towel. Cut into chunks. There're some fat in there thats what I like???? . Then set it aside
** We're going to toast some spices add a little bit of cooking oil, then add 4-5 cloves garlic, 4 pieces Chinese Anise,1 tsp black peppercorn,1 tsp coriander seeds, 2 pieces of Amomum costatum, 10 pieces of cloves, 2 cinnamon of sticks, 2 slices of galangal and
2 pieces of coriander root(substitute its stem), add some more of dried shiitake mushroom ( if you don't like just skip it ) then toasting all together on low - medium heat until you get aroma it takes about 3-5 minutes. So, once you got aromatic scent, remove from the heat, then place them onto a cheesecloth but take the mushrooms out. Fold the cheesecloth in together then tie it.
*** In a pot we need a little of cooking oil to toast the beef. Once the oil is hot put the beef in . This way provide more flavor for the soup and we will also add the toasted spices. Make sure that you will get more flavorful, Once the beef cooked medium well, put the toasted mushroom, a few of bay leaves, 2 tbsp of rock sugar, seasoning with 1 tbsp of salt, 3 chunks of palm sugar, 3 tbsp oyster sauce, 3 tbsp soy sauce. Then tossing everything together just a minutes then put the spice bag into the pot and one last thing add about 2 liters of water( for this step if you don't like too much water just add about 1.5 liters its fine) I like to eat so much soup and also like to add more seasoning later as well, so just in case I got enough water????. Then close the lid. Turn to high heat bring it to a boil. Once it boils , turn to low heat, you will see the blood scum, take it out and then close the lid, then continue cooking for 3 hours. Once 3 hours is up. I like to add a little bit of black soy sauce for more color you can also add since the first time but I don't want the beef look too much darker.
*** So we're finished with the broth . To eat with noodle I got fresh wide rice noodle. I just made it an hour ago if you want to know how to make it and also learn how to make Thai Lad Na as well , you can check it out, I put the link in description box. Put bean sprouts and Thai basil into a bowl then add soup in. Absolutely Thai noodle come with garlic oil and a little of ground black peppercorns I just made it a few hours ago and chili flakes. Sprinkle a little more coriander on or green onion if you like.
**** Add some seasoning such as fish sauce, sugar, chili flakes and vinegar ( if you like )
