Tater Tot Casserole Tex-Mex Style RECIPE
INGREDIENTS:
1 ½ Lb. Lean Ground Beef
1 Package Taco Seasoning
2 10oz. Cans Diced Tomatoes and Green Chilies
1 Onion (diced)
1 Green Bell Pepper (diced)
1 Cup Mushrooms (sliced)
1 Tbsp. Minced Garlic
1 Can Sweet Corn (drained)
1 15oz. Can Refried Beans
2 Cups Medium Cheddar Cheese (shredded, divided)
2 Lb. Bag Frozen Tater Tots (thawed)
1 Cup Black Olives (sliced)
½ Cup Green Onions (diced)
DIRECTIONS:
Preheat oven to 425 degrees.
In a skillet on medium heat, add ground beef, onion, green pepper, mushrooms, and minced garlic (in the video we cooked the onion, green bell peppers and mushrooms separately, but they can be cooked with the beef). Once the meat is brown and the onion and peppers are tender, mix in the taco seasoning.
Pour the cooked meat mixture into a 9 x 13 baking dish. Spread a layer of diced tomatoes and green chilis, then corn, and about ½ of the shredded cheese. In a small pan, heat the refried beans up with a little bit of water so it will spread easily. Then spoon a layer of refried beans onto the casserole and place a layer of tater tots evenly over the top. Bake uncovered for 25 minutes.
Top with the remaining shredded cheese, green onion, and olives. Bake for an additional 5 minutes just enough to melt the cheese.
Serve with salsa, guacamole, sour cream, chives.
