Tamale Pie with an Extra Kick -- Best Fast and Easy Recipe -- Jiffy Corn Muffin Mix
Tamale Pie
Ingredients
1 pound lean ground beef
1 onion chopped
1 can diced green chilis
1 can rotel tomatoes
2 cloves garlic minced
2 tablespoons taco seasoning
¼ cup water
¾ cup enchilada sauce
2 cups cheddar cheese shredded, divided
Topping
1 box corn muffin mix 8.5 oz
½ cup sour cream
½ cup corn kernels canned, fresh, or frozen
⅓ cup milk
1 egg
green onions and tomatoes diced for garnish
Instructions
Preheat oven to 350ºF.
Combine beef, onion, green chilies, rotel tomatoes , and garlic in a cast iron skillet.
Cook until no pink remains. Drain any fat.
Add taco seasoning and ¼ cup water.
Simmer until water evaporates.
Stir in enchilada sauce.
Put meat mixture in a 9 X 13 dish
Top with ½ cup of cheese.
Combine corn muffin mix, sour cream, corn, milk ,and egg.
Spread over the beef mixture.
Top with remaining cheese and bake 30-40 minutes.
Garnish with green onions and tomatoes and serve.

Tamale Pie
-1 Box Cornmuffin Mix (Like Jiffy)
-1 lb ground beef
-1 packet taco seasoning
-1 egg
-1/2 cup sour cream
-1/2 can creamed corn
-1/3 cup enchilada sauce
-1 onion, chopped
-2 cloves minced garlic
-2 tbsp olive oil
-2 cups good quality shredded cheese (Or shred your own!)
Directions: Preheat oven to 400 degrees. Spray oven safe skillet or pan with cooking spray. Mix corn muffin mix with egg, sour cream, and creamed corn. Pour into skillet and bake 20 minutes. Meanwhile, add olive oil to seperate pan and sautee onion until soft. Add garlic and cook 30 seconds. Add ground beef and cook until browned. Let cornbread cool. Poke with fork all around. Pour over enchilada sauce and spread. Pour ground beef mixture over cornbread. Add shreded cheese. Cover and bake 20 minutes. Uncover and broil the top until cheese is browned and bubble! Serve hot with taco toppings!

Recipe
1 lb. Hamburger meat
½ white onion diced
½ red bell pepper diced
¼ green bell pepper
2 cloves garlic chopped
2 Serrano peppers seeded and diced small
1 can Red Gold petite diced tomatoes any flavor
1 cup corn
1 ½ teaspoons salt
2 tablespoons ground chili powder
1 teaspoon cumin
1 cup broth I used bone broth
1 cup shredded cheddar cheese hold back ¼ cup for corn bread
In a medium skillet, brown the hamburger meat, add the salt cook about 3 minutes. Drain meat if necessary. Add remaining vegetables. Red bell peppers, green bell peppers, garlic and the serrano peppers. Sauté until translucent. About 3 minutes. Add the chili powder and cumin. Add tomatoes and broth. Let simmer about 10 minutes.
Corn bread topping
1- 6 oz package of Yellow cornbread mix, prepare according to package instructions. Add ¼ cup cheddar cheese.
In a 9-inch pie plate add the filling mixture top with the cheddar cheese. Then pour the corn bread mixture on top. Make sure to place pie plate on top of a cookie sheet. It might boil over a little.
Bake at 375° for 40 minutes. Let cook about 30 minutes then ready to serve and enjoy.

It's not just pie, it's cheesy chicken heaven!
Crust
INGREDIENTS
* Butter for greasing
* 1 cup masa
* 1/2 cup cornmeal
* 2 tablespoons sugar
* 1 tablespoon baking powder
* 1 teaspoon chipotle powder
* 1 teaspoon salt
* 1/2 teaspoon black pepper
* 1 egg
* 2/3 cup buttermilk
* 1/3 cup chicken stock
* 1/2 cup diced green chilies
INSTRUCTIONS
1. Preheat oven to 400°F. Grease a cast-iron skillet with butter. (You can also use a round pie dish if you'd like.)
2. In a mixing bowl, mix together all ingredients for the crust and pour into pan. Bake for 20-30 minutes until puffed and golden.
Filling
INGREDIENTS
* 1/2 cup red onion, chopped fine
* 3/4 cup fire-roasted tomatoes
* 1-2 tablespoons jalapeño, chopped and seeded (optional)
* 1/3 cup corn kernels, thawed
* 1 1/2 cups chicken, pulled or chopped
* 1 1/2 cups of your favorite enchilada sauce
* 1 cup cheddar cheese, grated
* 1 cup jack cheese
* Cilantro, sour cream and hot sauce for serving
INSTRUCTIONS
1. Mix together red onion, tomatoes, jalapeño, corn, chicken enchilada sauce and half the cheese.
2. Pour filling into baked crust and top with remaining cheese, bake for another 15-20 minutes until hot and bubbly.
3. Slice and serve with cilantro, sour cream and hot sauce, if desired.

Tamale Pie
Ingredients:
1 box of Jiffy Corn Bread Mix
1 egg
1/3 C of milk
1 lb. of ground beef (80/20 or leaner)
A few shakes each of garlic powder, onion powder and black pepper
A few pinches of salt
1 15.25 oz. can of whole kernel corn, drained
1 15.5 oz. can of red beans, drained
2 6 oz. cans of sliced black olives
1 10 oz. can of enchilada sauce
1/2 of a white or yellow onion, chopped
Directions: Preheat oven to 400 degrees. In a medium bowl mix corn bread mix, egg and milk until combined and set aside. In a large deep skillet over medium high heat, brown ground beef with onions. Add the rest of ingredients and cook for an additional 5 minutes. Take a 9 x 9 baking dish and spray with non stick cooking spray without the flour. Pour contents of skillet into baking dish and level out. Spoon cornbread batter over tamale mixture to cover and bake for 20-25 minutes until golden brown.
